Mexican Food For Lazy People

Here's what you'll need. You can delete or substitute as you'd like. I assure you, you cannot mess this up, and all the ingredients are really cheap.
 
Taco-sized flour tortillas (corn is icky)
Cabbage (shred it)
Red or Green (or both) Bell Peppers (chop it)
Colby Jack Cheese (shred it)
Black Olives (slice it)
Purple Onion (chop it)
Jalapenos (small ish can, already sliced)
Refried Beans (try Low-Fat, you'll feel better about yourself)
Salsa
Sour Cream
 
Preheat your oven to 450. Open the kitchen window, oven makes the place hot. Get out a baking sheet and cover it with tin foil. There is no reason to dirty up a pan for this recipe. Spray non-stick stuff over it and arrange as many tortillas as you can without overlapping.
Smear on refried beans. Add cheese, jalapenos, onion, olives, and peppers. Put it in the oven and let it bake for 8 mins. When they're done, add the cabbage, salsa, and sour cream.
 
Ok, so that was the tostada recipe. Personally, I don't get tosadas, they aren't a pizza, it is just too messy and awkward. So I tweaked it to make burritos instead. Here's how to do that:
 
Substitute the taco sized tortillas to burrito size. Run each tortilla under a running faucet and rub the water into it real good without making it tear and become icky. This step insures burrito goodness- nobody wants a crispy burrito. Pile everything in it, beans, cheese, peppers, onions, jalapenos, olives, cabbage, salsa, and sour cream. Wrap it all up and shtick it in (450 still) for 8 minutes. This is a superior way to eat all nice and tid-ay.
 
I like this recipe because I can only motivate myself for about 15 minutes to cook without giving up and having Spaghetti Os. If you have a cool chopper thing from an info-mercial, things fly right by, and in no time you have yumminess on a plate.

Hey, name's Luke from Onsted Michiga.  I have a couple cheap food items for ya.  The first one is the

King Casadilla

Ingrediments:

1 soft tortilla.  (gotta be picky bout what kind though)
Two types of shredded cheese.
Shredded onion, green pepper, or anything else like that.
Chunks of chicken or steak.
taco sauce from Taco Bell


Get yourself a good tortilla, and put a bunch of shredded cheese on one half.  (a couple types is good cuz just chedder or just swiss or whatever tastes not as good).  Put on your meat if you wanna, they're also good with just cheese.  Put on onions and stuff.  Put on whatever kind of taco sauce you like from taco bell.  I use about three fire sauces.  Fold the tortilla over, and put it on a frying pan.  No oil or butter, it'd screw it all up.  put it on about medium heat and watch it sorta.  Flip it around every couple minutes till both sides are brownish.  THen it's done.  You can also just microwave them on a plate instead of puttin em on the skillet or pan or whatever.  But it doesn't taste near as good all soggy like that.

Ingrediments:

1 good tortilla
(chipped) Sliced turkey
Lettuce
shredded cheese.
Rance dressing if that's your thing.


Take your tortilla and line half the outside with cheese.  Don't just plob a line of it in the center of the tortilla, cuz when you go to roll it you'll just get an edible bag full of food with no roll to it.  Make like a smile on your tortilla with the cheese.  Do the same thing with chunks of turkey and lettuce, and then your dressing.  Now roll it, and start at the end near the bottom of your smile of food.  Once it's all rolled you can eat it cold, or nuke it for a while.  I eat em cold.  WARNING:  Making them with ham, chicken, or beef will destroy all the goodness.  I like these other meats as much as the next guy, but it'll taste all weirdio.
