So this recipe is really easy. Does it take a little bit of time?
Maybe.....but it's worth it, and you have enough food for about a week.

Spinach-Sausage Strata

You need a 9" x 13" glass or corning ware baking pan for this
particular recipe, along with cooking spray.

Ingredients:

1 Roll Jimmy Dean Regular Sausage (or any brand you prefer)

2 boxes Jiffy Buttermilk Biscuit Mix

Milk (for biscuit mix)

I box Frozen Chopped Spinach, thawed and drained (I thaw w/ the
microwave and 'drain' by squeezing the box of spinach until all the
green water comes out)

1 block Pepper Jack Cheese

8 Eggs

What you do:

First, pre-heat the oven to 400 degrees. Next, brown the sausage and
set it aside. Then put the required amount of milk in the biscuit
dough and mix. Spray the bottom of the 9" x 13" pan with cooking spray
and spread the biscuit dough along the bottom. Put the sausage on top
of that. Put the spinach on top of the sausage. Next, cut the cheese
into strips and cover over the spinach, but leave some space
in-between. Last, whisk the 8 eggs in a bowl and pour over the whole
thing. Bake this all up for about 20 - 25 minutes. It's spicy, and
you can have it for breakfast, lunch or dinner.

Hi Todd! I just tried some way good apple crisp last night and got the recipe. I'm totally making it tomorrow and thought some oddtodd readers should do the same. Here's the deal:
 
Apple Crispiness
Preheat oven to 375.
 
1 2/3 c. Dry Apple Slices
2 Tbsp Cornstarch
1/4 tsp Salt
1/2 tsp Cinnamon
2 1/2 c. Water
2/3 c. Sugar
1/4 tsp Nutmeg
 
Mix all dry ingredients together, then add water and mix well. Bring to a rolling boil, stirring occasionally. Put in a greased square pan. Mix together the following:
 
1/4 c. flour
1/4 tsp. salt
2 tbsp Sugar
1/4 c butter
1/4 cup oatmeal
 
Mix together, make sure butter is evenly distributed and spread over apple stuff and bake at 375 for 25 minutes.
 
Ok, just noticed that it calls for dry apple slices. Hmmm. I don't know what's up with that. I would skip that and just put fresh apples in there and half the water to 1 1/2 c. and not boil it, just mix together and put in pan. I'm not sure where to find dry apple slices. If you know of a place, go for it!
