Wingy-Dingy's
 
Frozen or fresh chicken wing parts.  I used to go the fresh route and cut them myself, but have gotten lazy and just get as many bags of the frozen kind I think will satisfy my guests. 
 
I put the wings in a huge Tupperware coat with olive oil and season with either Tony's Cajun seasoning for a spicier taste or Willingham's dry rub for more of a BBQ flavor.  The Willingham's is the best BBQ seasoning in the world.  You probably won't be able to find it in the store, and will have to get it on-line, but well worth it, trust me!  It's great for pulled pork as well....but back to the wings......I use a Weber grill and make my fire, banking the coals to one side.  I put the wings on the indirect side, and cook for about 2-3 hours, flipping, mixing, and stirring every 30 minutes, until they are golden brown and just a little crispy on the outside.
 
Sauce:
One bottle of Frank's Red Hot Sauce
One bottle of Hooters wing sauce, Hot if you can handle it.
One stick of butter.
One table spoon of minced garlic or however much you want.
Salt.
Black Pepper.
Cayenne pepper to taste, depending upon how hot you like it. 
 
Bring it to a boil and then simmer it down.  You can either pour it over the wings and shake them in the Tupperware, or simply drizzle some over them.  I like the second method that way you can have some hot ones and some plane ones.  Serve with ranch or blue cheese and beer!
 
Enjoy and be sure to take an ice pack with you to the bathroom the next morning!

Peanut-Butter Bacon
 
This is the best sandwich I have ever had, I guess next to a Reuben, but my mom used to make this for me for lunch and I would always get made fun of for it.  But it rocks.....two pieces of bread, whatever your fancy....coat both sides with mayo, then the bottom side generously with crunchy or smooth peanut butter.  lay a couple crisp pieces of bacon on and top with lettuce.....just try it....trust me!

Easy Ham and Potato (and Corn, if you like it) Casserole.

This is easy, pretty cheap and really, really good.  It will feed 5 people
once or one person 5 times!  And, if you add more cheese every time you warm
it, it gets better! I think it would also freeze well, but I haven't tried
it.

16 oz diced ham- I use a small canned ham and chop it up myself.
2 cups frozen hash brown potatoes- you can thaw them if you want, but you
don't have to
1 cup whole kernel corn (if you like it). 
1 can cream of potato soup
1 can cream of mushroom soup (if you don't like mushrooms, use 2 cans potato
soup)
1-2 cups shredded cheddar cheese.  More or less to taste!
1/4 cup grated parmesan cheese


Put the ham, frozen potatoes, and corn (if you like it) in a bowl.  Add
soups.  Mix together really well until the soup coats everything.  Pour into
casserole dish or GLASS baking pan.  DON'T use metal because it has to go in
the microwave first!

Microwave for about 7-10 minutes or until the mixture is hot at the center
and the soup is liquefied.

Remove from microwave and allow to sit and cool for about 5 or 10 minutes.
I use this time to shred the cheese, but you can use the bagged stuff, and
use this time for something else, like eating the
already-shredded-out-of-a-bag cheese. 

Combine cheddar and parmesan cheeses and sprinkle liberally over casserole.

Pop into a 350 degree oven for about 30 minutes, or until the cheese is
gooey and slightly browned at the edges.

Let stand for about 10-15 minutes to allow the contents to firm up.

If you used the corn, you don't even need a side dish! 

This is awesome when served with warm, crusty bread or buttermilk biscuits!
