TUESDAY'S LUNCH SPECIAL IS from Katie in Pittsburgh, PA
Marti Gras Pasta
It's yummy and easy!
Hi tOdd!
This is me and my roomie's favorite dinner. It is super quick and easy and
tasty. and cheapy.
Ingredients:
1/2 box of tri-color farfalle (bowtie) pasta-cook it up and have it ready
2 chicken breasts, cut up into finger-sized pieces
1/2 a pint of sliced mushrooms
1 can of smallish black olives, halved
a handfull of fresh yummy snow peas with the tops and bottoms snapped off
(when i was really poor, and when i lived in the ghetto and they didn't have
them, i used the cheapy frozen boxed ones, which are okay, but not great)
some McCormick Black and Red Pepper seasoning or some other hot-as-hell cajun
seasoning thing.
1 or more cloves of chopped garlic
1/2 cup of romano and/or parm cheese
astickabutter
To make it:
in a big stir fry pan or pot cook up the chicken pieces at medium heat in half
the stickabutter and put a whole bunch of hot seasoning in it. like as hot
as you can stand it. then when its all butterygood and almost done, throw
in the mushrooms and the olives and heat em up. toss in the garlic too.
turn the fire down to where it's almost off and throw in the snow peas and some
more of that good good butter and some hot stuff. then put the lid on and
let that stuff steam the snow peas and melt the butter and make a kinda yummy
butter-hot sauce. Throw the hot bowties in and toss it up with the cheese.
then it's all done! and you eat it!
this makes a whole lot of food. if you're more poor, add more pasta; if
you're more rich, you can substitute shrimps for chix. and you can bite
me. the best thing is that this is even better as a leftover.
enjoy!
love,
katie
