I
love making rice and eating rice, 'cause it's cheap and goes good with stuff
and stuff. But there is always left over rice, so I learned to make fried
rice for the left over stuff from a chinese guy I used to work with. This is
a pretty cheap and tasty way to eat for a few days. It takes a little work
but not much. It helps if you have a rice cooker to make the rice in the
first place, but it works with any kind of leftover rice (even the extra
from chinese take out will do). This totally revitalizes old rice.
What
you need:
- 2
cups (or so) of leftover cooked rice (preferrably a little aged in the
fridge). This can be any type of rice. I like brown rice 'cause it's
healthy and tasty.
- 2
cups of frozen peas and carrots.
- 3-4
green onions (the long thin ones)
- 2
eggs
- 2-3
tsp of seasame oil (any oil will work really)
- 2
tsp soy sauce
- salt
and pepper (to taste)
Before
starting, crack the two eggs into a bowl, and mix up the eggs (like for an
omelet). This works better if the eggs are at room temp, but not necessary.
Also chop up the onions into little pieces (or big pieces if you go that
way). Heat up a really big pan (or a wok if you have one). Dump in the oil
and roll it around the pan. When it's nice and hot, dump in the rice and
stir it around. Heat up a separate pan and dump in the eggs (don't forget to
Pam the pan, otherwise the eggs will stick). Make a little plain omelet
while the rice is cooking (if you start with a pretty hot pan, this should
only take a couple of minutes). Remove omelet and place on a plate. Now dump
the peas and carrots into the rice. Stir it around again. Go back to the
little omelet thingy and dice it up into little bite size pieces. Don't
forget to check and stir the rice and peas and carrots. Now dump the egg
into the rice, peas, and carrots. Stir yet again, making sure the rice on
the bottom of the pan isn't burning. Now dump in the onions, and add soy
sauce and salt and pepper and any other spice that strikes your fancy
(I like adding a little crushed red pepper, 'cause I like things hot). Keep
stirring and checking and stirring and checking until everything is hot and
yummy and done. Turn off heat. Scoop and serve.
If
you want to get even more creative, dice up some chicken (or use frozen
shrimp), cook separately, and add it to the mix (you can use the same pan
you cooked the eggs in, but cut up the chicken ahead of time). The eggs
can also be added directly to the rice raw (no omelet making) while the
rice is cooking, but do this early in the game to insure thorough
cooking. If you don't have 2 cups of rice, just modify everything in
proportion.

Me and my mother were visitng some friends in Buffalo when we got this
recipe from them, i'll call it
COUS COUS VEGGIE DELIGHT
I normally hate cous cous, but this is delicious.
Whatcha need:
A box of cous cous (I like parmesean, but any flavor works)
Assorted veggies (I prefer some zucchini, onion, brocoli, and mushrooms)
Olive oil
Soy sauce
You kind have to guess how much ya need based on whos there, etc.
But, throw some veggies in a pan with olive oil until they get nice
and sauteed. When theyre ready, make the cous cous. Throw the
veggies in with the cous cous and mix it up. After that, just add in
a little bit of olive oil, and a little bit of soy sauce, mix it up
again, and enjoy! It tastes great.
Its really easy to make, pretty cheap, and can be served as a side
dish thing, or if you throw in some shrimp, you can eat it as a meal
if you want.

Hi OddTodd,
Here's a quick way and easy way
to make a birthday ice cream pie. You can have as many colored layers
of flavors as you want.
Ice cream pie
ingredients:
-chocolate syrup
-pre-made cookie crumb crust
-ice cream or sorbet in one or
more flavors -softened but not melted (in microwave ax 35 seconds or left
out) three small containers or one regular square size will pretty much fill
the shell
-candy and whipped cream to
decorate the top if you want
On the center of the pie crust
make a circle of chocolate syrup about half the size of a hockey puck.
This will hold the crust together when you cut it to serve. Freeze
until solid.
scoop softened ice cream into
pie crust so is filling the whole bottom (no air bubbles). To make
different layers of flavors, freeze the first layer to solid before adding
the next. Freezing to solid is approx. and hour.
Decorate the top of the cake as
you wish and freeze to solid.
