Chicken Enchiladas!
Ingredients:
Boneless Chicken Breasts (turkey also applicable, although not as good)
Corn Tortillas
Monterey Jack Cheese
Green Chile Sauce(El Paso is best)
Vegetable Oil
1. Start off by thawing thie chicken, if it's unfrozen.
2. Preheat the oven to 350.
3. Shred the cheese.
4. Fry the corn tortillas in oil. Make sure nto to leave it there too
long, or you will have gigantic tortilla chips....
5. Put some chicken, cheese, and green chile sauce into a tortilla,
and roll it up.
6. Put it on a baking pan.
7. Repeat steps 5 and 6 for however many tortillas you have.
8. Use the remaining cheese and chile sause to put over the enchiladas
themselves.
9. Bake the Enchiladas in your already preheated oven for 35 minutes.
10. Enjoy!
BTW:If you have leftovers, put them in the fridge until later. DO NOT
reheat them, they are much better cold.
This dish goes well with refried beans, tortilla chips, and
especially, Coke/Pepsi.
I like it cause it's good.
