Hey Todd. My name's Laura and I love your
site--it's one
of the funniest things out there! Anyway, I was poking
around and discovered all the recipes and thought I'd
contribute a little something too.
I didn't create this recipe, my boyfriend did, but I don't
think he'd mind me sharing it with you--he loves your site
just as much as I do!
But I'll name it after him anyway, just to be on the safe
side.
Erik's chili burritos:
So if you're like me, you end up with cans of chili left
in your pantry after you've eaten everything else.
Personally, I don't remember buying so many cans...I
think they migrate from parts unknown. But chili is
almost never really a meal all by itself, especially if
you don't feel like making cornbread, so the cans just
stay where they are, and you go on thinking that you'll
eat them someday. Well today you can!
This recipe is great if you're craving a burrito but don't
have all the fixins. All you need is:
tortillas
cheese
chili (Whatever's in your pantry will do, but I prefer the
spicy kind. You can have it with meat or without)
anything else you like in a burrito (olives, onions, etc)
Heat up the chili in the microwave or on the stovetop
until it's warm, glop it on to a tortilla, and cover with
whatever else you want. Serve with tortilla chips, rice,
or whatever. The chili already has pretty much what you'd
put into a burrito anyway (beans, spices, and meat or
veggies), so you get a Mexican feast without having to go
out and buy a whole can of refried beans (but if you
happen to already have a can living in the pantry with the
chili, I'm sure it would taste pretty good). It's pretty
simple, but I'd never thought of making a burrito that
way, so it was a cool discovery for me. Plus one can of
chili can make a fair number of burritos, so you'll be
plenty full.

I served these burgers to my friends in the States, with mixed
reactions, but if you like Hamburgers, nothing beats the grandaddy of
them all,
Aussie Burgers.
You need a large hamburger bun, a nice mince meat patty, or a thin
peice of steak can be used. You squirt some tomato sauce on the bun,
and whack your meat on top. Then in order you put on a slice of cheese
(so it melts), a few pieces of bacon, pineapple (ring), tomato, onion,
betroot (canned), egg (cooked sunny side down), lettuce and a dash of
mayo.
An Aussie burger is quite a mouthful, but the only way to have a
burger!
