Bridget's Magic Iced Coff-ay
(named in honor of my wife who invented it)

Don't you love those yummy coffee shop iced coffee drinks, but can't bring yourself to spend $4 on just one?  Make your own!

What you'll need:

Tall glass
Chocolate syrup
Ice
Extra strong coff-ay (or espresso, if you are so inclined)
Milk

Set your tall glass on the counter.
Squeeze off about 1/2 inch of chocolate syrup in the glass.  Hershey's is best, but any will do.
Now fill the glass with ice.  Crush it first if you can, but regular cubes are sufficient.
Fill the glass about 3/4 full with your extra strong coff-ay.
Top off the rest of the glass with milk.
Stir, drink.

Fudging the ratios of ingredients to taste is encouraged.  Always pour the chocolate syrup in before the ice, else it'll get too cold on the ice and not mix properly.  At the time of this writing, I have made and drank exactly one of these drinks, but it was so delectable that I was moved to share it with the world.  And that was with weird store-brand globby chocolate, cubed ice, instant coff-ay and 1% milk.  I can't wait to get my hands on some higher quality ingredients.

Here is the recipe for the ultimate lazy - butt!

Lazy Butt BBQ Chicken
 
Chicken breasts or whatever pieces you like
BBQ sauce - I like Sweet Baby Ray's but whatever floats your boat
1 sm/med onion if you want to put on airs and get fancy
 
Put a layer of BBQ sauce on the bottom of baking dish (size will depend on how much chicken you are making - you'll want to make a single layer.  3 boneless skinless breast fit nicely into a 8x8 square pan) - it's just enough so that the bottom of the chicken with get BBQ-y
 
Place chicken in a single layer on top of the sauce.
 
Cover with remaining sauce - I usually just spoon it over the rest of the chicken and make sure that it is completely covered.
 
Cover with foil, bake at 375 for about 45 minutes, uncover, bake an additional 15 minutes.  The cooking times can vary - mine turns out dry, but I like it like that.  Rule of thumb (for me) is I stick a fork in the chicken after 45 minutes - if the juices run clear, I cook it just a little longer uncovered to bake on the BBQ-ness.
 
If you want to be all fancy like - peel the onion, cut in quarters and stick a quarter in each corner of the pan.  It's a subtle difference, but it's nice garnish as well.
 
When I started living by myself, my mom was pleased that I thought of this all by myself.  I know.  I'm a genius.

Mmmmmm...Emmie's Fruit Cobbler
(This is my grandmothers recipe who's a rockin' 96 years old now and she has eaten
yumminess like this her whole life. This is a suthin' cobbla so don't bust out your rolling pin!.)

What you need:
1 qt cooked fruit (sweetened to taste - peaches, apples, or cherries, etc)
1 stick of butter
3/4 cup all-purpose flour
3/4 cup sugar
2 teaspoon baking powder
3/4 cup milk
 
What you do:
Melt 1 stick of butter in deep oblong baking pan (8x16-like a brownie pan or glass casserole)
 
Mix together in a bowl:
3/4 cup AP flour
3/4 cup sugar
2 teaspoon baking powder
 
Gradually stir in 3/4 cup milk. Pour into pan w/butter. Spoon fruit over top. Bake at  375°  till crust rises and is golden brown. Around 20 minutes. Serve it hot with either whipped cream or ice cream..
