MOM'S COTTAGE CHEESY PIE
This is good comfort food even if you don't really like cottage cheese pie. You can make it with the stuff you have around the apartment but never use plus a pound of cottage cheese (one of the low container things). It's really good on a cold day with applesauce. Very hard to screw up. Takes like 10 minutes to prep. Make it when you get up at 10 a.m. and you can eat it for lunch, and then you feel like you made your morning all productive and stuff even though you were just watching TV.
INGREDIENTS:
1 pound cottage cheese
1 cup milk
2 eggs
1/2 cup flour
2 Tbsp sour cream or plain or vanilla yogurt (you can also just scrape off 2 Tbsp off the top of a yogurt cup)
4 tbsp melted margarine
3 Tbsp sugar
1 tsp vanilla (you can leave this out if you don't have it, especially if you use vanilla yogurt) sprinkle of cinammon (ditto, no need for it)
Preheat oven to 375. Take some margarine and grease a 9x9 or 8x8 pan. Mix everything and pour it in. Bake 1 hour 10 minutes. Should be golden brown on top and usually bubbling. Yum. But careful, it's hot!
