Dear Todd,

Since you seem to be in a zucchini vein, I'll share

my mother's
zucchini parmesan recipe.

Ingredients:
zucchini, cut into planks about 8"x2"x1/2"
Italian flavor bread crumbs
2 eggs
flour
oil for deep frying.
spaghetti sauce (whatever flavor you like. I like to use the garlic and
mushrooms)
provolone, mozzarella, and parmesan cheese

Start by deep-frying the zucchini. Dip the raw zucchini planks in the
egg, then the flour, then the egg again, and then in the breadcrumbs. I
use a deep-fryer set to 350 degrees F. Fry until golden brown, then set
aside to drain on paper towels.

in a dish, pour a thin layer of spaghetti sauce. (I use a 9x9x2 glass
pan. Anything bigger than that and it takes forever to bake.) Add a
single layer of zucchini, then top with provolone or motzie cheese.
Continue sauce/zucchini/cheese until the dish is almost full (leave
about 1/2" empty), and make the top layer of cheese parmesan. Cover
with foil and bake at 375 degrees F for about an hour.

The reason I like this dish is that you can make a whole ton of it at
once and freeze it for later. Make sure that you wrap the top with
plastic wrap and foil before you freeze it. Thaw and take the plastic
wrap off before you bake it. (I forgot once.) Also, it's vegetarian, so
my roommate will eat it.

Luna's Fried Baked Potato

Umm ok... I came to KSU with my mom's Betty Crocker International cookbook
(Copyright 1980). So while my bf was here, had a bag of potatos and made
Stovies (Scottish Skillet Potatos). Then I added cheese, next thing I knew
it's a baked tater, but fried!

So here goes.
Ya need:
2-3 large potatos (sliced)
1 medium white onion (sliced)
about 2 tablespoons margerine/butter
salt n pepper n parsley
1/2 cup of water
4-5 slices of american cheese
1 Tablespoon Butter/Margerine
1 cup of milk
1.5 tablespoons cornstarch
1.5 tablespoons cold water
Bacon Bits
Slice Green Onions
Dollop of Sour Cream


Here's what ya do.
Melt butter on medium-high heat in skillet (make sure you have a lid for
it..you'll see why later). Layer half of potato and onion slices in the
butter. Sprinkle with a bit of salt, pepper, and parsley. Then layer the
other half and top with a bit more salt, pepper, and parsley. Add the 1/2
cup of water so it'll come to a nice sizzle and cover to cook for about 15
or so minutes (may wanna turn the heat down a little). Add in milk and
tablespoon of margerine. While that heats up, break up cheese and drop it
in, but keep an eye on it so it wont burn too easily. When it comes to a
slight boil you can either add more cheese or milk to your taste. Then in a
small bowl (or coffee mug laying around) mix your cornstarch and water so
the cornstarch dissolves and add to the milk mixture. Turn down the heat and
keep stirring while it thickens.
After that your potatos should be done, and so should your sauce.
So serve it up!
Taters on the bottom, cheese on top, then top with bacon bits, green onions,
sour cream, or whatever you like!
