This is my
Tortilla-Pizza
recipe:
3 main Ingredients:
-Whole Wheat Tortillas (La Banderitas brand is what I get cuz it's all I can
find)
-Canned peeled and diced Tomatoes
-Shredded Mozzarella cheese (whole milk or part-skim but part-skim browns
better)
Also, Italian seasoning, garlic, and olive oil.
Preparation:
First, make yer sauce. Open a can of Toms and drain well. Push the lid
down to really squeeze the juice out. Put 'em in a bowl with Italian
seasoning and minced garlic and mix 'em up.
Now, heat up a skillet with a little oil or cooking spray. You're gonna
crisp up your tortillas in this to keep the sogginess factor down later. As
you're woking on this, go ahead and turn your oven to broil.
I find I have to contiuously press down the tortillas cuz they keep blowing
up with air.
Once you have your tortillas nice and crispy and light brown, top 'em with
your tomatoes and cheeze and stick them in the oven about 6 inches from the
red glowing things.
You can put them on the back of a cookie sheet so they're easier to handle.
Once the cheese is melting nicely and they look about 1/2 way done, cut off
the broiler and let the remaining heat complete the cooking.
Keep an eye on them seriously cuz the broiler will burn stuff really quickly
if left unattended. I do not advise going in the other room for anything.
When they look ready, slide them out and slice em up and eat.
I dig this recipe cuz it tastes good and it's pretty cheap. Cheeze ain't
real cheap but if you get a big bag of the stuff, it'll last quite a while.
I love using the diced tomatoes for a sauce. You can use whatever size
tortillas you want or you can try flour or corn tortillas, whatever kind of
sauce (spaghetti works), and you can even use freakin' American Pastuerized
Processed Cheese Food if you really must. Toppings are up to you. I like
mushrooms.
This is such a basic recipe and leaves lots of room for
experimentation but you still gotta use the tortillas. Enjoy!
