Hey Todd,
This recipe is called Tasty Spicy Hotdish Stuff.

I like it because it's all gooey melty cheesy tasty.
It's best when it hot right off the stove, and it's good to make when you're out camping too.

Take 2 pounds of hamburger, fry it up in a pot, breaking it up into chunks
with a ½ teaspoon of crushed red pepper and some chopped or crushed garlic.
I like a lot of garlic myself, but ya need at least 1 clove. When it starts to get all brown,
toss in a can of corn (drained), a couple of cups of cooked rice (flavored is best, like Uncle Ben's Beef flavor),
and a cup of water and a taco seasoning packet. Simmer it until the burger is cooked all the way,
and the water evaporates. Then, take it off the stove, add a half pound of shredded cheese, stir it up
'till it's all melty good, and serve! I put some sour cream and hot sauce on mine, but that's just me!

'really-fast-yummy-fudge-that-even-tOdd-could-make'
 
This recipe is from Baker's chocolate and Eagle Brand condensed milk.  I make it all the time.  Super easy, really good, and you can fancy it up for special holidays.
 
1 can Eagle Brand condensed milk
10 semi-sweet chocolate squares
1 tsp vanilla or other flavouring that turns your crank (mint, almond)
 
Either in a double boiler or the microwave, melt your Eagle Brand with the 10 squares of chocolate and flavouring  (some folk like to chop up the squares to make melting easier---lightweights I say)
 
Stir often, do not overcook and do not let water touch the fudge or it will be doomed, doomed I say.
 
Pour into a buttered pan and stuff it in the fridge to cool for at least an hour.  Cut into 1 inch squares.  Voila.
 
**Fancy schmancy**
 
pay attention here:
 
to make '2-tone fudge', use only 2/3 of the can of Eagle Brand with about 8 squares of chocolate and let cool.  Use the remaining 1/3 of can, melt with about 6 white chocolate squares and pour over cooled base.  2 levels of coloured goodness.
 
**extra fandangle fancy schmancy**
 
for holidays:  add food colouring to the top white chocolate layer as it melts,  ie green for Christmas, or St. Paddy's, red for Valentine's day, orange for Hallowe'en (looks cool with the black bottom layer)....and...........add flavouring also, ie mint for Christmas.
 
**extra super fandangle fancy schmancy**
 
for holidays or birthdays:  buy some fancy sprinkles to top off the fudge, like little Christmas trees for Christmas, or the red sparkly thingies for Valentine's day or hearts, or cars for a boys birthday, little pumpkin sprinkles for Hallowe'en.
 
Pop the fudge into little foil cups and people will worship you.

Hey, buddy.  My name is Chad and I just finished
reading your book for the second time.  I really love
this book, and I just wanted to let you know that.
But the most important thing I wanted to let you know
about was the fact that the other night I had just
come home from work and I wanted something to
eat.....something...different.  Well I looked on top
of the microwave and saw that I had some mac and
cheese.....some tuna fish, too.  So I looked in the
cupboard, and alas, there was a can of peas.  I was
like "ok, todd, here goes nothin," and I made cap'n
Todd's cheesy tuna surprise, and I gotta tell ya, pure
genius.  It was the best thing I've ever made.  I just
want to thank you for that kick-ass recipe, it really
