I'm a vegetarian and I ate something like this at a restuarant once and loved it, so I went home and made my own version of it.
This is really yummy stuff.... you can eat it in a bowl "salad style" or you can wrap it up in a burrito.
Really Yummy Vegetarian Garlic-Yogert Black Bean and Rice stuff:
RICE:
2 cups uncooked rice
4 cups Water
2 cubes veggie stock if desired
GARLIC-YOGURT DRESSING:
about 2 cups plain yogurt
a lot (maybe 3-4 cloves) of garlic
lots of basil
lots of cilantro
a bit of yellow curry powder
add a little water if you think it's
too thick
TOPPINGS:
1 can black beans
a bit of shredded cheese
shredded lettuce or cabbage
shredded carrot & celery
INSTRUCTIONS:
First put your rice on, make it
according to regular directions (I added the vegetable stock when it
boiled). While the rice is simmering prepare the yogurt dressing. Pour like
maybe 2 cups of plain yogurt into a mixing bowl. Add lots of garlic, basil
and cilantro. Add a bit of curry and a little water if you want to thin it
down. Mix it all up and adjust to taste.
Shred your cheese, lettuce, carrot, celery, cabbage and whatever other veggies you want, chopped tomatoes would be good too.
Open 1 can of black beans, drain and rinse. When the rice is done cooking stir in the black beans. Scoop the rice/bean mixture into a bowl, add some shredded cheese on top, add all your veggies on top of that and then generously scoop the garlic/yogurt dressing over top and ENJOY!!! Or you can throw all the ingredients into a soft flour torrtilla and that would be really yummy too.
I totally made this up as I went along so you can change it however you want .... it's really fricken good :)

Hey Todd,
This recipe is called Tasty Spicy Hotdish Stuff.
I like it because it's all gooey melty cheesy tasty.
It's best when it hot right off the stove, and it's good to make when you're out
camping too.
Take 2 pounds of hamburger, fry it up in a pot, breaking it up into chunks
with a ½ teaspoon of crushed red pepper and some chopped or crushed garlic.
I like a lot of garlic myself, but ya need at least 1 clove. When it starts to
get all brown,
toss in a can of corn (drained), a couple of cups of cooked rice (flavored is
best, like Uncle Ben's Beef flavor),
and a cup of water and a taco seasoning packet. Simmer it until the burger is
cooked all the way,
and the water evaporates. Then, take it off the stove, add a half pound of
shredded cheese, stir it up
'till it's all melty good, and serve! I put some sour cream and hot sauce on
mine, but that's just me!

Hey, buddy. My name is Chad and I just finished
reading your book for the second time. I really love
this book, and I just wanted to let you know that.
But the most important thing I wanted to let you know
about was the fact that the other night I had just
come home from work and I wanted something to
eat.....something...different. Well I looked on top
of the microwave and saw that I had some mac and
cheese.....some tuna fish, too. So I looked in the
cupboard, and alas, there was a can of peas. I was
like "ok, todd, here goes nothin," and I made cap'n
Todd's cheesy tuna surprise, and I gotta tell ya, pure
genius. It was the best thing I've ever made. I just
