Sounds kind of gross, I know, but its pretty darn good!! Its easy to prep, and put it in the oven and walk away!
1) A London Broil (or
whatever piece of large steak you like - Round Steak, Flank, whatever)
2) 1 Can of Green Chiles
3) 1 Can of Diced
Tomatoes (I like the flavored kinds, but whatever you can get)
4) 1 Onion
5) Garlic
6) Salt and Pepper
Prep the steak by trimming a lot of the fat off of it. Unlike the grill, the cooked fat doesn't taste so good. Season the steak with salt and pepper.
Place steak in a lidded baking dish, Corningwear or whatever. If you don't have anything with a lid, then use tin foil or something to cover right before you put it in the oven
Open cans and pour it out on
top of the steak.
Add garlic to taste - we
always have a big ole' jar of minced garlic in the fridge and I add a
spoonful of that
Slice the onion kind of
thick and put on top.
Put the lid on the dish
and put in a 400 degree oven.
Cook for about an hour, until the steak firms up. You can cut it in half to
see how done it is, then stick in back in if its not done enough.
