Hi Todd and fellow readers,
 
I'm from Halifax, Canada, and I have two recipes that are not only healthy but really delicious.  The salad  has all the four food groups and can be a meal!  I really like this recipe because it doesn't taste like a watery boring salad. It has UUMPH and flav-a. Also it has the salty-sweet combination, that I'm always craving.
 
Lyz's Insane-o Salad
 
basically mix all the following ingredients up:
 
*hunk of feta cheese, crumbled
*few handfulls of soy nuts
*1 can of chick peas (rinse them out in a strainer with lots of water, shake to dry--gets rid of gassy can stuff)
*dried cranberries (or crasiens)
*half a cuke chopped up
*red or green onion
*fresh basil (or any yum fresh herb, cilantro works too)
*grated carrots
*sunflower seeds
*couple handfulls of baby spinach
 
toss this all up with some balsamic vinager/olive oil mix  ...or rice vinegar or Salada if its available. Add salt to taste.

One more recipe to add, (I like the hummos recipe because the cilantro really gives it a different and delicious edge.)
 
Easy Breezy, Tasty Hummos
 
*1 Can of chick peas (drained, rinsed well)
*2-3 cloves of garlic minced
*handful of finely chopped cilantro (really gives it a new dimension)
*splash of lemon juice (add more if you like it really lemon-y)
*lots of extra virgin olive oil (the good stuff that smells like olives)
*dash of cumin
*couple big spoonfulls of tahini
*few dashes of salt
 
Blend all the goodness together, until its a fine creamy quality, (i find a handblender does the trick) if its too stiff keep adding more lemon juice or olive oil to taste.  A good subsitute for tahini, if you don't have any available, is peanut butter, or sesame seeds blended in.  If you;re going to bring this recipe to a party, TRIPLE IT!

Dear Todd,

I’m from Pittsburgh and I tried making this a little bit ago. I call it a sweet and salty sammich.
It tastes much better than it sounds. I had a craving for something salty and something sweet at the same time so I made this.

Ingredients:

-1 pretzel rod

-1 zebra cake

Step 1: Tear or cut the zebra cake until it looks like two pieces of bread.

Step 2: Break up the pretzel rod into four pieces.

Step 3: Put the pretzel pieces on one part of the zebra cake then put the second one on top.

This’ll probably make a good party snack.

Mexican Lasagna

I know there are other dishes out there with this name, but mine is very customizable to suit tastes. Also, mine's easier to make.

1 lb ground beef, cooked and crumbled
1 small package of either cottage cheese or ricotta cheese
1 package of taco seasoning
1 can of chilis, the little green pepper, not beans and meat
1 can of refried beans

1 package of 10 or so tortillas
1 package of sour cream
1 medium sized jar of salsa
shredded lettuce
a few veggies you like in general

Mix together the first 5 ingredients in a big bowl.
Set this slop aside.

Get yourself a baking pan of any size and test fit a tortilla. It's not going to fit, so tear it where it doesn't. Take the piece you tore and use it as a template to tear the rest. That's how you layer it all together. Make sure you cover the bottom of the pan completely, you can be a little lazier with later layers, but the bottom one is important if you don't want doing the dishes to be a big pain in the neck later.

This is how we build the layers:
Tortilla pieces covering the bottom of the pan (or whatever layer you're on), some of that bean slop you made, shredded cheese and finally, veggies (minus the lettuce, that goes on top later)

Repeat that process till you've filled the pan.

Throw this into the oven at 350 till the cheese on the top layer starts bubbling. This is where presentation comes in. Have any leftover tortilla pieces? Cut them into smaller, more uniform pieces and fry them up in some Canola oil. Stab those crispy little bits down into the lasagna at random places. Throw some lettuce and other fresh veggies down over the top, and have salsa and sour cream on the table to top with.
