Burrito Casserole
 
It's oh so Yummay and doesn't cost too much Monay
 
What you need:
1 package of frozen burritos
1 bottle of green taco sauce
1 package of cheese (for convenience purposes I prefer pre grated cheese but if you enjoy grating cheese have fun with that)
1 container of sour cream (optional but what kind of freakin freakity-freak freak doesn't like sour cream?)
 
1) Preheat oven to the heat it says on the burrito container.
2) Place the burritos into a casserole dish as close together as possible (if you don't have a casserole dish you can use any glass or metal pan like container glass works best)
3) Smother the burritos with green taco sauce
4) Put in oven until about a minute before the time the burrito bag says
5) Sprinkle the grated cheese over the burritos (how much is really preference, but word of advice don't be skimpy on the cheese or ElfUp will stomp your @$$(you know he will))
6) Put back in oven for about a minute (just long enough for the cheese to get all meltay)
7) Remove from oven and dish onto plate (or other desired eating surface)
8) Top with sour cream and enjoy (unless you're a sour cream hating psycho)

Hey there tOdd!  I made these yummy nuts for a thing at work and thought I’d share.  I might have before but I can’t remember, sorry.

Sweet Holiday Nuts!

1 stick of butter (unsalted)

Maple syrup

Cinnamon

Pumkin pie spice

Nutmeg

Kahlua

Orange zest

Juice squeezed from that orange

Pecans

Melt the butter and heat up the other stuff in a sauce pan (except the pecans).  When it’s all hot and bubbly, pour in the pecans.  Get them all coated in the syrup mixture and keep stirring for about 10 minutes or so, so they get good and covered with the stuff.  Strain the nuts and place them on a foil lined cookie sheet.  Bake at 350 for about 10 minutes or so.  You want the nuts to be a pretty brown shade, but if they get too dark, they’ll burn really fast.  When they come out of the oven, let them cool on the cookie sheet for about 5-10 minutes, until they come off the sheet easily.  Put them on a paper towel to soak up any extra mixture and then enjoy!  I’m sorry I don’t have any measurements; I don’t use them when I cook.  I save the left over syrup to use on French Toast or something.

Stuffed Chicken Thighs!

I made this the other night out of no where and it was on the cheap and
really yummy:

You need:
1) a pound and a half or so of Boneless/skinless chicken thighs (like 1/2
the price of breasts)
2) Bacon
3) Minced Garlic
4) Fresh Mushrooms, sliced
5) Parmesan cheese
6) Onion, thin sliced and cut in half
7) Whatever else you might like...


How to make:
1) Fold out each thigh on wax paper or plastic
2) Cover with another piece of plastic
3) Pound them a bit, with an empty beer bottle or a mallet if you have one
(I don't)
4) Sprinkle each with Kosher salt, Black pepper, and Parm
5) Add garlic, a few slices of mushrooms, and onion
6) Fold 'em over and wrap each with slice of bacon
7) Bake in a 375-400 deg. oven for about 20 minutes until bacon crisps but
before they burn.

Time/temp may vary as I just kind of kept an eye on them and wasn't really
keeping track.
Make adjustments as neccessary and Enjoy!

Breakfast Casserole

Why I like it:  Because its gooooood

Where from:  Columbia, SC

Where I got it:  Kind of revamped a recipe I had on shepherd’s pie

This is like a breakfast shepherd's pie w/o the corn.  But you can add corn if you like.

Ingredients:

12-18 patties of sausage (I like the original Jimmy Dean sausage patties, but the maple ones are ok)

1 pkg of sliced muenster cheese

1 medium yellow onion

1 bell pepper (your choice on color)

1 3 lbs package of red potatoes

Salt, pepper & butter to taste

1 11x13 glass casserole dish (You can use a smaller or a larger glass casserole dish, but you might need to tinker with the amount of sausages and potatoes)

What you do:

Brown up the sausage patties in a frying pan with a little butter.  You don’t have to cook them all the way so about 2-3 minutes on each side.  Place them on some paper towels and let them cool down for about ten minutes

Slice up the potatoes into quarter with the skins still on and boil them up in a pot of water (use enough water to cover the potatoes).  When they are fork tender, mash them with some butter and salt and pepper to taste.  You want the mash potatoes to be kind of dry so that they crisp up later when you bake the dish.  While that’s boiling away, dice up the onions and the pepper.  Then cut up the cooled sausage patties into quarters.

Onion-peppers on top of the sausage

Sliced Munster cheese-enough to cover the whole pan

Salt and pepper

Mashed potatoes last with more salt and pepper if desired

You can put some pats of butter on top of the mashed potatoes if you want so it will brown better, but not necessary.

Bake the casserole in a 350 degree oven for about 20 minutes.  If you make this ahead of time and stick it in the fridge overnight it will definitely taste better, but you have to cook it for 30 minutes.

Enjoy!  It’s the best breakfast you will ever have!

Okay, this is a super simple recipe, that tastes damned good, and I learnt it in a gas station in France when I was out of cash:
 
Take one baguette. Get a baguette, not a french roll.
 
Spread spreadable butter over each side of it. Margarine actually tastes better, but whatever.
 
Put only ham, and swiss into the 'buns' and only one slice of swiss per piece of bread.
 
Mash it like a sammy. Cut it into bite-size servings, and imagine yourself in a european gas station, paying 4.50 (euros) for a gallon of gas while eating the tastiest food EVER!!
