After cracking open a can of condensed Minestrone Soup, I asked
myself: "I wonder if this would be better made from scratch. And
what the hell are some of those things in there?" I searched and
searched and found THE BEST minestrone recipe. Good news, it is also
diabetic-happy! It takes a lot of ingredients, but it is rainy and
cold outside, so I find it totally worth it to sit on the bed with a
warm cup o soup!
Awesome Minestrone Soup!
1 tea Veggie oil
1 lb ground beef (optional- can be vegetarian)
1 c. chopped onion
1 c. chopped celery
1 c. chopped green pepper
1 c. chopped zucchini
1 c. diced potatoes
1 c. chopped carrots
1 can diced tomatoes in sauce (28 oz.)
6 c. water
2 tea. salt
1 tea worcestershireish sauce
1/4 tea. pepper
2 bay leaves
1 can kidney beans
1/2 c. uncooked pasta (macaroni, shells, penne, whatever! Maybe
even whole wheat?)
Brown and drain meat (if you don't want a vegetarian soup) Add
Onion, celery, green pepper, zucchini, potatoes, carrots, tomatoes,
water, salt, and worcestershireishmisch sauce, pepper, and bay
leaves. Stir until combined. Bring to a boil then reduced heat
simmer covered for 1 hour- watch tv or a movie or something. Add
kidney beans and pasta. Cook for 30 mins.

I have a few good recipes ( I
think they're good anyway) that are easy on the budget.
I like them because they kept us alive
when my boyfriend and I were pretty much on our own at 15 and 17 years
old. My soon to be husband was starting his own business ( which means
no money ) and I made $3 an hour babysitting, which pretty much paid for
gas to get to and from the house, whatever was left over went to food.
Anj's Ramen Noodle
Stir Fry
Pack of Ramen Noodles
Before you open the package, smash the noodles
up by kind of punching them on the counter.
Open package and put noodles in frying pan with
maybe a 1/4 cup water or so, add the seasoning
packet.
Cook on low till noodles are soft. You might need
to add more
water.
Way better than making soup out of it and you can
add
stuff to it, like maybe if ya got a tomato or
onion sitting around.
Marie's Mashed
Potato Mountain
My Mom used to make this when I was little and
money was tight.
Chop up a couple potatos, boil, drain and mash.
Add a little butter,
milk and salt if you like.
Fry up a small portion of ground beef, drain.
Open a can of corn or other preferred vegetable
and heat.
Pile mashed potatos on plate, put ground beef on
top and then
pile on the corn.

Pasta with Sauce
Boil some elbow macaroni, drain and add ketchup
and salt.
It's not bad!

Okay, so after
having an intense craving for peanut butter and also a fajita
i decided to save time and combined the two...hence the creation of------
TORTILLA MEETS PEANUTBUTTER, CHOCOLATEY,
MARSHMELLOWY GOODNESS IN FAJITA FORM
Ingrediants:
-Tortilla
-Peanut butter
-Marshmellows
-Chocolate of choice (preferably m&ms or a bar but anything will work)
Pretty much spread all the ingrediants on the center of the tortilla and
fold the edges in so its a big circle deely and use peanut butter to make
sure the edges stay---then microwave so the marshmellows get all puffy and
the chocolate melts
PERFECT snack---easy, safe, healthy (okay, not really healthy but its always
fun to tell yourself it is)...either way, its damn good!
