A friend’s wise Italian Mother used to tell us “Eat! You’re too skinny! No man’s gonna love you!”  

            LASAGNA ROLLS

12 Lasagna noodles

3 oz shredded mozzarella                              1 1/3 c 2% cottage cheese

1 ˝ oz parmesan cheese                               2 eggs lighten beaten

1 pkg frozen chopped spinach                        1 tsp salt

˝ tsp pepper

MIX ALL TOGETHER

2 cups tomato sauce (you may wish to add ˝ c chopped onions, celery, green pepper, mushroom plus Italian seasoning)

or whatevery Italianish veggies are in the crisper. Use what ever prepared sauce is on sale at your grocery that week, in a tin or a jar do not matter to the noodles.

Cook Lasagna noodles as the package directions say.

Lay out all noodles, scoop 1/3c cheese & spinach mixture into centre of noodle.  Spread evenly and roll.  In 13 x 9 baking dish,

Spread thin layers of sauce.  Arrange lasagna noodles on top of sauce.  Cover with remaining sauce.

Bake covered at 350F for 25 minutes.  Remove cover & bake for 5 minutes longer.

Eas-ay and cheap, will keep in the Fridge, eat em up. Yum.  Even my bachelor Brother can make these.

Hi Todd-

I saw ya needed some recipes, so I thought I'd send you my Dago Sausage Casserole.   You can call it Italian sausage casserole, if you want to be more PC.  We always called them Dago sausages at home, so it wasn't until my fine old Italian Grampa learned this little factoid and hit the roof that I learned that Italian sausages were not called Dago sausages, not in front of Grampa anyway.  Anyhow, I like this recipe because it is easy, delicious and cheap if you can find sausages on sale.   And since I just got out of school and have plopped into this jobless market with an assload of debt, I have gained an appreciation for cheap and easy.

You need:
1 package Italian Sausages in casing (Hot is better-isn't it always?)
5ish big ass potatoes (The more potatoes, the cheaper the dish and the more the leftovers)
1 medium to large onion
1 green pepper (I substitute mushrooms because I like them better, but you can use either, neither or both, but whatever).
1 or 2 cans of Cream of Mushroom soup (depending on how potato crazy you went)
Dash of soy sauce
Seasoning to taste-I use seasoning salt, Italian seasoning and garlic.


Cut the  sausages into bite size pieces.  Brown in a largish pan (I use a dutch oven).  While browning, cut the veggies into biteable chunks.  When the sausage is browned, throw in the veggies, soup, soy sauce and seasoning.  Cover and cook on low, stirring occaisionally.  When the veggies are soft, you've got yourself a meal.

CHEESE GARLIC BISCUITS AKA RED LOBSTER
BISCUITS
 
 
2 c. Bisquick
2/3 c. milk
1/2 c. grated cheddar cheese
1/2 c. melted butter
1/4 tsp. garlic salt
 
Mix Bisquick, milk and cheddar until a soft ball forms. Beat vigorously for 30 seconds. Drop by balls onto an ungreased baking sheet and bake at 450 degrees for 8 to 10 minutes. Mix butter and garlic and brush on rolls while still on the pan and hot.

Here's Another One:
(Good for a few Days)
 
 CORN -N- CHICKEN CHOWDER 
 
3 slices bacon or 1/2 c. Baco's
1 lb. boned, skinned chicken breast, cut into 1/2" cubes
3/4 c. each finely chopped onion & celery
4 c. chicken broth (low sodium)
4 c. whole kernel corn (frozen)
2 c. diced potato
1/2 tsp. salt
1 c. heavy cream (evaporated/skimmed milk)
 
Cook bacon until crisp; set aside. Save 2 tablespoons fat (or use canola oil). Add chicken, onion and celery. Saute 10 to 15 minutes until tender. In blender puree 1 cup chicken broth and 2 cups corn on high until smooth. Stir into pot with remaining corn, broth, potatoes and salt (may omit). Bring to a boil. Reduce heat to simmer partially covered 20 minutes. Stir in cream (or evaporated/skimmed milk). Add white pepper to taste and parsley if desired. Sprinkle each serving with bacon (Baco's) bits. Serves 4 to 6.

Yummy recipe for Northern style veggie pot pie

2 carrots
1 stalk of celery (like 2-3 pieces)
1 bag of frozen corn
1 bag of frozen peas
1 bag of frozen green beans (or you could just use canned veggies, but I prefer frozen)
1 small can of 4-5 biscuits
4 small cans of Campbell's Cream of Chicken (or cream of mushroom for true vegetarians)
*4 large potatoes
*1/2 cup of milk
Some butter and salt&pepper

1. *Boil potatoes and mash with 1/2 cup of milk--or you could just use a box of instant mashed potatoes.
2. Spread out mashed potatoes on bottom of casserole dish. 
3. Spread two cans of Cream of Chicken on top of mashed potatoes.
4. Cook all of your veggies and spread a layer on top of Cream of Chicken and mashed taters.
5. Spread the other two cans of Cream of Chicken on the veggies. 
6. Open biscuits and split each biscuit in half--so you have 8-10 biscuits.  Layer these on top of the casserole.  Put in the oven at 375 degrees until the biscuits are browned on top and viola!

Sweet Kielbasa Appetizer

Here it is! Easy, tasty, cheap and I always get asked how to make it!
Three ingredients:
1. 1 can of beer (bud light usually but whatever, just not thick Guinness type stuff)
2. 1 link of Kielbasa (I'm not picky, whichever one is on sale)
3. 1 cup of brown sugar

Cut the kielbasa into half inch slices, mix in a large pot with the brown sugar and beer and boil uncovered for about 45 minutes to an hour (until the mixture boils down to a nice sauce like consistency.. But remove from heat before it gets gluey!)… Serve on a plate with toothpicks..

You can increase this recipe by multiplying the ingredients in equal parts.. 1 link serves about 4 people..
