Macaroni Casserole
1lb Box Macaroni or Rotini Pasta
1lb Bacon
1 large Onion, Diced
1 can Diced Tomatoes
3 cups Shredded Cheddar
Boil pasta according to package, drain and set aside
Cut the package of bacon crosswise into 3/4" strips and fry in large
pan for
10 minutes
Add onion and continue cooking for about 10 more minutes
Add can of tomatoes (undrained) to pan and cook until heated thru
Put Macaroni and Bacon Mixture into Large Casserole dish and toss
together
Mix half the cheese into the Casserole and Spread the other half
over the
top
Bake for 20-25 minutes in 400 degree oven. The cheese should be
well melted
and the juices from the tomatoes should be bubbling (if using clear
pyrex
etc)
Let cool for 10 minutes, cut into squares and serve.
This was my favorite dish as a child. It is still great comfort
food that
lasts days. Just cut off a square and Microwave.

I've been

Saw your
request for great bachelor recipes and thought I'd pass along my
favorite cheese filled recipe - it turned my vegitarian roomie into
a full-fledged meat eater (bwa ha ha!)
Easy Cheesy Meatloaf
(Serves
4) – Best leftovers ever!
2 lbs ground beef
1 sleeve saltines – crunched up
2 eggs
½ onion diced
1 (one) 12 oz. can tomato sauce
Generous Handful (or two) of cubed cheddar cheese (yum!)
Salt & Pepper to taste
Pre-heat
oven to 350°F
Dice your
½ an onion, cut your cheddar cheese into cubes (and munch a couple
while you’re at it!), crunch up the saltines in the sleeve. The
Squish crunchy crunch feels good, doesn’t it?
Put the
ground beef, crunched up saltines, 2 eggs, diced onions and half the
tomato sauce
in a big bowl. Shake some salt and pepper over the pile.
Pull your
sleeves back, and wash your hands, then go in with all the joy of a
little kid at the beach and squish it all together until things feel
purty well mixed.
Then take
the glob, transfer it into a casserole dish/pan thingy and form it
into a log. Start poking cubes of cheese in all over the place
until you like the cheese-to-beef ratio, then patty pat-pat the log
smooth and pour the rest of the tomato sauce over your loaf.
Good to
go. Now schlep it in the pre-heated oven and let it bake for 45-50
minutes. You’ll be drooling over the smell before you know it!

Sorry I've been holding out bro. It's a recipe
I came up with awhile ago, and it was a big hit at our Christmas
party last year.
And yes, you can enjoy all week. Mark in St. Louis.
Crockpot Four Alarm
Chili
4 tablespoons oil (your choice, I like
olive)
2 and 1/2 pounds boneless beef chuck, trimmed and cut into small
pieces
2 medium yellow onions, chopped
2 medium red bell peppers , chopped
1 seven ounces can smoked chipotle peppers, chopped (save the adobo
sauce)
1 sixteen ounces can whole tomatoes, drained and chopped
1 twelve ounces can kidney beans, drained
1/2 cup (or to taste) chili powder
1 tablespoon dried oregano
2 teaspoons ground cumin
1 teaspoon salt
1/2 can of beer (drink the rest please)
Heat 2 tablespoons of oil in a skillet over
medium heat. Add the beef and brown on all sides. Transfer to
Crock-Pot. Add remaining 2 tablespoons oil to the skillet and saute
the onions and bell peppers until soft. Transfer to Crock-Pot. In
Crock-pot stir in the beans, tomatoes, chipotles, chili powder,
oregano, cumin, salt, adobo sauce and beer. Cook uncovered on high
for 1 hour, then cover and cook on low for an additional 8 to 9
hours.
