Half-assed Vegetable Burrito Whatever

1 bunch of vegetables

Pan spray

Goya Adobo and other sprinkly stuff

Salsa (optional)

1 can refried beans

Tortillas

Cut up a bunch of fresh vegetables.  I usually use red, green, yellow peppers, mushrooms, onions and whatever.

Spray a pan with Pam or whatever off-brand pan spray you happen to have.  Olive oil flavored is good.

Saute the vegetables in the pan with some spices like salt and pepper and especially Goya Adobo.

You can mix in some salsa if you want, but not so much that you’re making soup.  I like Tostitos Restaurant Style.

While the stuff is heating in the pan, warm up a can of fat-free refried beans in the microwave.  Why fat-free?  Because they taste exactly the same as the kind that has a ton of fat, and there’s no fat.  Hence the fat-free part.

Smear the refried beans on some tortillas.  (You can get really low fat, really high fiber tortillas, too, if you look hard enough.  I get em at Jewel.)

Spoon the vegetables onto the tortilla/bean device you have just created, and roll it into a half-assed burrito shape.

Serves at least two.
