Here is a recipe for my favorite Light And Tasty Summer Salad… Hope you enjoy it!
This is one of my favorite summer salads… its great to take to a BBQ or just to whip up when its really hot and you don’t know what to eat because its just too darn repressive outside to move. Its quick, its easy and its YUMMY :)
2 Fresh
Cucumbers
3 Tomatoes
1 Red Onion
8 Oz. Feta Cheese
Balsamic Vinaigrette
Olive Oil
Cut the cucumbers
into bite sized chunks and toss into a bowl.
Cut the tomatoes into bite sized chunks and
toss into the bowl.
Dice up the onion and toss it into the bowl.
Mix the veggies together.
Sprinkle the feta cheese on top of the
veggie mix.
Drizzle with Olive Oil.
Drizzle generously with Balsamic
Vinaigrette.
Shake/Toss until its all mixed and coated
with dressing.

OH! OH! Here's another quick and easy and yummy one for when you actually make it out to the grill..
Take a Vidalia Onion, Make a cut in it about 2/3 depth. Then make a cross cut about the same depth ( so that you can open it up a bit ) Toss a spoonful of BUTTER on top and jam some into the crevice you just created. Then sprinkle a tablespoon of sugar on top on the butter…. Now, wrap it in aluminum foil and stick it on the grill while you BBQ that steak or burger or whatever… when its time to eat, take the onions off the grill and enjoy the caramelized onion. It just falls apart and it makes a great side dish.

I dig your web site a lot. Here's a drink recipe from the days we used to just mix together whatever we had with alcohol and hope for the best: 1 part Bacardi rum, 2 parts Orange Juice, 1 part Coca Cola. We called it Sludge. For no good reason it comes out a greenish sorta color, but it's tastier than it sounds.
We also tried to make Guiness Coffee once, which is where you make coffee, but instead of water you brew it with Guiness stout. That didn't end up as well as we hoped, but I still feel like it could work with the right formula.

recipes for summer is what you want? This is good,
because I have the perfect one. Even if you don't
consider yourself a bourbon-kind-of-person, you'll
suck this one down with gusto. It doesn't even qualify
as foo-foo, as it's not too sweet, and it bears no
accoutrements (except the lime rind, so if you're
really macho, just skip it):
Kiss on the Lips
3 oz. bourbon (the good stuff, such as Knob Creek or
Baker's)
5 oz. apricot nectar
splash of lime juice
cracked ice
lime rind for garnish
Combine the bourbon, apricot nectar, and some ice in a
shaker, and give it a couple of good rattles. Fill a
collins glass halfway with more crushed ice, strain
the drink over the ice, splash the lime juice on top,
and give it a quick swirl with a straw. Garnish with a
twisted lime rind.

About about 8 years ago I was down in St Thomas sitting at an outside bar enjoying a liquid lunch. One Rasta dude comes up and nods at the Rasta dude behind the bar. The bartender Rasta dude produces this putrid red-orange liquid that I later learn is rum punch.
So I try one. It was frickin’ awesome.
So I ask the Rasta bartender dude for his mix. He says “no way mon” (Yes the Rasta dudes have the Jamaican accent there too)
“It’s a family recipe”
So I have 2 more. Then I say “Can buy your family recipe for $20” (That’s about $54 in Eastern Caribbean dollars)
So he says ok. I ask him for a pen.
He says “no way mon, ya gotta remember it”
So I have 3 really strong rum punches in me on a somewhat empty stomach sitting in the hot sun. And here’s this dude sayin’ “ya gotta remember” !!!
So anyway, I guess it was important enough because I did remember the best rum punch recipe ever.
Here goes:
“OK mon, ya take 1 pot (assume he meant “part”) rum, 2 pots pineapple juice, 2 pots grapefruit juice and a splash of red grenadine, ya poot in a shayka wit ice, den serve it ova ice”
I still use the recipe.
