CHICKENY CHEESE DIP
 
This sounds really weird, but it's SO good.   Every time I take it to a party, it's gone within a hour.   And it's really easy to double the recipe depending on whether the party is big or small
 
2 regular cans, (or 1 large can) of white meat chicken
1 7 oz. tub of Price's Pimento Cheese (or whatever brand you like)
1 16 oz. tub of sour cream
1 packet of Hidden Valley Ranch salad dressing mix (NOT the dip mix!)
 
Drain the chicken and mix everything together.   Then put in the fridge for about an hour so all the flavors have a little time to come together.
 
Serve with Frito's Scoops!   Yummy!

Hi, Todd!  I really wanted to share this recipe b/c it's super easy, inexpensive, you can make it ahead of time, and it can serve a lot of people!  I make these a lot when I have a house full of people staying overnight.  Some of my friends make them ahead of time for busy school mornings.
 
Homemade English Muffins-who needs McDonald's?????
 
Serving size: 6 (it's so easy to change the serving size)
 
6 English Muffins
7-8 Scrambled eggs
6 slices of smoked ham (this can be found in the lunch meat section)
6 slices of American cheese (don't get the cheap oily kind)
 
In a flat pan pour the egg mix and make like an omelet (except don't flip it in half).  You might not be able to cook all the eggs at once.  Once the eggs are done cooking, slice them into squares and place on English muffin.  I usually have extra eggs that I might put an extra slice on.  Finish layering with 1 piece of sliced smoked ham, 1 slice of cheese, and the other half of the English muffin.  Heat for 40 seconds and serve!  These keep for a few days also, as long as they are refrigerated.

I tried this recipe out the other night and could not get enough of it.... and the recipe feeds a family of four!
 
Asparagus Ham Pasta
 
4 cups uncooked farfalle (bow tie pasta)
10 oz frozen asaparagus, brocolli, or whole green beans
cubed ham
1/3 cup milk
8 oz. chive & onion cream cheese
 
Cook the pasta, and throw in the vegetables during the last five minutes, then throw in the ham at the last minute. Drain. In another bowl, mix up the cream cheese and milk, then toss with the pasta and cook through until cream cheese is melty. It is super-yummy. Go make some tonight!
