Hi Todd,

A woman in my office made this and it was delish.  She called it

Bubble Cake  It’s amazing!!

Ingredients:

1 box white or butter vanilla cake mix (and an egg, oil, and water to make it)

1 envelope raspberry jello

I tub Cool Whip

Make the cake according to package directions.  Bake it in a 13x9 glass pan.  During the out-of-the-oven-to-cool time, take a spoon and poke some holes all along the top.  Mix up the jello mix with some water, but instead of letting it gel, pour the mixture over the top of the cake.  Put it in the fridge overnight.  In the morning, frost it with Cool Whip.

It’s so good because the gelatin never really jells – it just soaks into the cake and goes into the holes you poked after baking.  Cut into squares, it looks really pretty, too – all swirled raspberry and vanilla cake.  I guess if you don’t like raspberry you could use another flavor of Jello.

Hey Todd..hope you are keeping cool during this heatwave.  Here's a
little something that won't heat up your kitchen.  Enjoy!

Guacamole Chicken Wraps (good anytime but great for a picnic)
----------------------------

2 tablespoons fresh lime juice
1/4 teaspoon salt
1 ripe avocado
1/4 chopped seeded tomatoes (plums are best)
4 green leaf lettuces leaves
4 (8-inch) fat-free flour tortillas
2 cups shredded skinless, boneless chicken (about 8 oz)  Left over
chicken works great here!

1. Place first three ingredients in a medium bowl, mash with a fork
until smooth, stir in tomato.
2. Place1 lettuce on each tortilla, spread about a 1/4 cup avocado
mixture on each each
lettuce leaf.  Top each  serving with  1/2 cup chicken.   Wrap in foil
or parchment paper, chill

Hi Todd! This is actually my mother's recipe for crab salad. There is no name for it.

You can add shrimp, lobster, calamari, scallops, etc. and call it Seafood Salad. It's all according to taste.

1 8 oz. box of your choice of dry pasta
Your choice of seafood (I use crab, shrimp and sometimes lobster)
Roma or Grape Tomatoes (They're the sweetest)
Green Onions (Scallions)
Garlic Powder
Onion Powder
Salt/Pepper
Mayonnaise

Boil pasta until done. Rinse and let cool. Chop up tomatoes, scallions, and seafood if needed. Add seafood, tomatoes, scallions, mayonnaise and various seasonings to your taste. Mix thoroughly and chill. Can be eaten right away, but is best if left in fridge for a few hours or even better over night. DELICIOUS!!!

Here's a way to make last week's Super Sour Summer Wake Up Call even better! Mix a packet of Kool-aid in a cup of hot water (makes it dissolve easier.) Then put a spoon or something in it. Put it in your freezer and let it sit overnight. Then you have a Super Sour Popsicle! Even better for summer!
