Todd:

Here’s an easy recipe that’s great when you are barbequing, which we do frequently out here in California. During the winter.  In our shorts.  [Yes, I am bragging].  This is also good to bring to a potluck.  It’s light and is a nice contrast to the heavier ribs/hamburgers, etc.  You can make it quick and there are rarely any leftovers.

You will need:

Corn [a few frozen bags unless you like cutting it off the cob]

Avocado’s [2-4 depending on your taste…make sure they are ripe!]

Purple or red onion

Limes -1 for each avocado you use + 2-3 more to taste

Fresh Cilantro—don’t use dried here…it would just be too weird

Salt and pepper to taste

Optional: ¼ - ½ cup diced red bell pepper for color, extra sweetness.

Whatcha do:

Pour corn into a colander and run it under warm water for a while to defrost.  I used a bag of sweet and a bag of white for different colors and to change the taste and color, but you could use plain old yellow and it works too.

While the corn is defrosting, peel and dice avocado’s into small pieces and put them in a separate bowl.  After you are done with each avocado, squeeze lime juice over diced avocado to keep it from turning brown.

Dice purple/red onion until you have ¼ - ½ a cup; Dice up cilantro, or use clean scissors to cut up [it’s easier].

Dump corn into bowl you are serving, dump in avocado and all of lime juice, onion and cilantro. [Add peppers here too if you decided to use them]. Toss and add salt pepper and more lime juice to taste. [Sometimes the lime juice drains to the bottom so you may want to hold off adding more until just before serving if you are at home.  If you want to get fancy, slice a few lime slices or pepper strips on top to decorate. Refrigerate until serving. Serves 10+

Tuesday's Recipe: Quesadilla Pizza

Inspiration: Quesadilla + Craving for Pizza

Story: I wanted some pizza, and I even had a few pizza ingredients, except
for yeast for a dough. So looking in my pantry, I tried out tortillas and
they work just as well!

Ingredients: 1 tortilla (unless your hungry)
- a spoonfull of tomato pasta sauce
-handfull of monzerella cheese
-toppings (such as but not limited to): mushrooms, bell peppers, pepperoni,
olives, ham slices, et cetera.
Step 1: Preheat oven to 300 degrees F.
Step 2: Place tortilla on a baking dish (or pie dish if you have one) and
spread on tomato sauce. Not too much.
Step 3: Pile on the toppings and cheese and pop into the oven until melted
and bubbly (no more than 10 minutes).
Step 4: Take out and enjoy!

Variation: You can also make this like a traditional quesadilla with the
cheese and toppings between two tortillas and serves pizza sauce on the
side.
Also try out a White Pizza with alfredo sauce instead of tomato sauce with a
bit or oregano sprinkled ontop.
