Dear Todd,
If your readers want to show-off a little this Thanksgiving holiday, but want something Super Easy, I have just the thing.  Let's call them "Sweet Potato Party Balls".
You'll love them because they are YUM, but you'll also make everyone think you went to a lot of trouble for them.  Awww.

Sweet Potato Party Balls

You need:  Sweet potatoes  (1 big one will make about 8 balls)
                 Large, fresh marshmallows
Butter, milk, and salt to taste
Crushed nuts (use what you love, pecans are gooood)

In a large pot, boil your potatoes until soft.  The skins will slip right off after cooking, so don't bother to peel beforehand.
With skins removed, put cooked potatoes in a large bowl for mixing.  Beat with mixer just like mashed potatoes, starting with 2 Tablespoons of butter and a small splash of milk, dash salt, adding more as needed.  You can add, but you can't take it away---use caution here.
Once beaten (not runny!  you want the mashed po's the consistency of soft play-dough) shape some potato around a large marshmallow making sure to cover it well.

Once marshmallow is completely covered in potato, roll into crushed nuts. Place nut-covered balls on sprayed baking sheet.  Drizzle lightly with some melted butter and bake at 350 degrees for about 25 to 30 minutes.  The marshmallow melts inside the potato ball and the nuts get crunchy.  It is a total score.  Peeps that don't like sweet potatoes like them this way--they're that good.

Then sit back and act all tired, like you fussed or something.
Love and Happy Holidays to ALL!

*PS~these travel well, prepare and then bake them at your meal site.

Yummy, Creamy Turkey Muffins   (feeds 6 girls or 1 hungry dude, twice!)

2 Tablespoons butter, use the real deal if you've got it.
2 Tablespoons all purpose flour
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup milk, whole milk if you've got it, 2% is fine tho
1 cup shredded mixed cheese (your favorite combo shred at the market)
1/4 teaspoon Johnny's sauce, or Worcestershire sauce
3 English muffins, split in half and toasted
6 leftover turkey slices

~In a saucepan over low heat, melt the butter, when it's smooth--stir in flour, salt & pepper.
Keep stirring and slowly add the milk.  Bring to a boil and boil for about 2 minutes STIR THE WHOLE TIME--really.  Reduce heat to low.
Add cheese and Johnny's sauce (or Worcestershire).  Stir until cheese is totally melted. Remove from heat.
Put toasted muffins in a shallow pan next to each other. Top each half with your turkey. Top with 2 or 3 Tablespooons of cheese sauce.  Broil for about 4 or 5 minutes--or until bubbly-- with muffins 5 inches from heat source.  Salt & pepper as desired.
Yum.

I love this recipe because it's a tasty way to eat your turkey the day after Thanksgiving.  It's even better for breakfast if you've got a little hangover or something going on.  Los Angeles, CA

Help I'm in desperate need of the recipe for cherry pie that was on the Sokely's sour re cherries can.  Where can I find it?

(write me if you can find this please. oddtodd7@gmail.com)

Today's (last week's) recipe is not exclusive to Disneyland.  The Monte Cristo has been around a long time -- it's good also with raspberry jam or honey for dipping.

Marcia Ann asked where she can find Hunts Chili Beans.....well, good ol Hunts has DISCONTINUED making them.  You can NOT FIND THEM ANYWHERE.  I even called Hunts, and they said they have stopped making them altogether, and have no plans to bring them back:(.  I submitted a great chili recipe made with only "Hunts" chili beans and now that recipe sucks because, in my opinion, there is no substitute for those beans.  If anyone has a replacement chili bean that's decent, please let me know........

Todd......you rock my world!!!

Best,
