Dear Todd,
Merry Christmas to you! Here is your long awaited
original recipe. I call it Todd & Ginger Live Happily Ever After.
But you can call it anything you like! The sauce is sort of tangy and sweet
(like you) and the chicken is so juicy,
I hope you love it. Let us know.

TODD & GINGER LIVE HAPPILY EVER
AFTER
what you need:
- 1 egg white
- 2 teaspoons cornstarch
- 2 teaspoons dry white wine
- 1 pound skinless, boneless chicken, cut in
1-inch pieces
- 6 cloves garlic, minced
- 2 teaspoons minced fresh ginger (use a whole
Tablespoon if you love the ginger!)
- 3 teaspoons vegetable oil
- 1 cup frozen mixed vegetables, thawed (try
broccoli and water chestnut)
- 1 cup fresh mushrooms, sliced
- 4 scallions, minced (white & green tops too)
- 1 hot red chile pepper, seeded and julienned
(don't touch your eyes after this!)
- 1/2 a small green pepper, julienned
- 1/3 cup chicken stock (Swansons is good)
- 1 Tablespoon and 1 teaspoon soy sauce
- 1 teaspoon brown sugar
- Fried or steamed rice, prepared
How to:
In a bowl, combine the egg white,
cornstarch and wine. Place the chicken cubes in the bowl with the egg white
mixture, and stir to coat all of the pieces.
In a wok or big skillet, over high
heat, saute the garlic and ginger in the oil for 2 minutes. Stir
constantly! Do not let the garlic burn. If it does burn, start over--it
will taste bitter and gross.
Add the coated chicken and stir fry on
high until cooked, about 5 minutes. Again, stir constantly--that is
the only "secret" to successful stir-frying. Add the vegetables, mushrooms,
scallions and both kinds of peppers. Cook until heated, about 3 minutes.
Stir, stir, stir.
Add the chicken stock, soy sauce, and
sugar to the wok and simmer (you can finally NOT stir) for 5 minutes more.
Serve with fried or steamed rice. Serves about

Ramwich
Ingredients:
one package cooked ramen (chicken flavor is good)
two slices toasted bread
one slice fried balogna
mayonaise
mustard
Preparation:
apply mayonaise and mustard to both slices of
toast, add balogna, pile on
as much of the ramen as you can and enjoy.
goes well with chips and beer
I like this because it's easy, cheap, tasty and
fills you up fast.
