I've
been going to your website for years, ever since my freshmen year at
college. Your Tuesday's recipes were great when I had less than $20
bucks for my month's food budget. Now that I'm a college grad, I
want to give a great cheap recipe to those of you who are still
subsisting on ramen. My mom used to make it all the time when our
family was just starting out and we didn't have much monay. It may
sound gross but it's great and it fills you up. And the best thing
is that there's only 5 ingredients, including salt and pepper!
SPAM AND CABBAGE
you will need:
a head of cabbage (usually about 30-40
cents a pound)
a tin of Spam (about $2-$3, any kind you want, or you could use deli
meat, be creative with it!)
an onion (less than $1)
salt and pepper (hopefully you have these, if not add another
dollar)
Ok, so cut an onion into slices, they don't have to be thin, I make them about a quarter to a half inch thick; it doesn't really matter. Then saute them on medium heat in a pot while you're cutting the spam into bite size chunks.
Add the spam to the onions and stir every now and then so it doesn't stick to the pot. Add salt and pepper. Easy on the salt, the salt in the spam will season the onions and cabbage. You can go crazy with the pepper.
While the onions and spam are cooking, start cutting up the cabbage, making sure to throw away the fibrous middle parts. It looks like a lot of cabbage but it will wilt down when you cook it. Add it to the pot, stir, and cover.
Cook for about 15 minutes, stirring every few minutes. Stop when you feel the cabbage is soft enough. Add salt and pepper to taste.
The leftovers are great, just put them in
the microwave. It will last a few days and you only spent $3-$4!
