Hey tOdd. Here is another recipe from my youth. Mom used to make it from leftover roast beef, but I didn't have any leftovers, so I made it fresh, and it was delicious!  I don't suppose you could post feedback (pun intended) on what peeps think about the recipes...sucked ass, it was great, so so, etc. Thanks.

HASH (not the drug)
 
Ingredients
1 1/4 Lb chuck steak, trimmed and diced
2 large potatoes, diced
1 medium onion, diced
salt
pepper
eggs
 
Putting it together
Cook the chuck over medium high heat in a large skillet. Add salt and pepper to taste and cook until browned. Remove the meat from the pan and drain. Add 2 tablespoons of oil to the pan, add the potatoes, onions, a little more salt and pepper and cook until golden brown. Reduce heat to medium, add the meat to the potato/onion mix and heat through. Serve with a fried egg on top, your favorite veggie and a biscuit. Serves 4-6.

If it's raining and coldy these 2 recipes are all you need.  Invite a couple friends over for movies and a bitchin' meal.  I like them because they are fast to make, leaving more time for the move-ays & relaxation.  You'll like them because they are cheap (under $12 to feed 4) & yet impressive and  "souper" tasty.  Try them on YOUR next rainy day.  Happy Cooking Vibes to ALL~

SPEEDY SECRET AGENT SOUP
~serves 4--- Or 1, for lunch in a thermos, all week
 
1/4 cup chopped red onion
1/4 cup chopped celery
1 Tablespoon butter
1 can vegetable broth (14 oz)  (SWANSONS is good)
1 can diced tomatoes, undrained (14 oz)
1 can sliced mushrooms, drained (4 oz)  (OPTIONAL)
2 cups frozen vegetables (use your favorite)
1 Tablespoon sugar (yes, sugar)
1/4 teaspoon marjoram (I've used basil instead)
1/8 teaspoon pepper
 
In a large saucepan, saute onion & celery in butter until tender.  Add broth, tomatoes, mushrooms, vegetables, sugar, marjoram & pepper.  Bring to a boil.  Reduce heat and simmer-- uncovered for 20-30 minutes while you make and broil the sandwiches. (recipe below)
 
SERVE WITH:
 
CRABBY MAN HOAGIES
~makes 4
 
1 pkg (8oz) imitation crab meat, chopped (you CAN use the real deal, but that isn't cheap!)
1/3 cup mayo
1/4 cup chopped up celery
1/4 cup chopped up red onion
1 Tablespoon yellow mustard
1/4 teaspoon seasoned salt (or regular is fine too)
1/4 teaspoon curry powder
1/8 teaspoon pepper
4 sandwich hoagie rolls, split in half
1 cup (4 oz) your favorite cheese, shredded (Swiss, cheddar, provolone, etc.)
1 cup butter , softened
 
In a bowl, combine:  Crabmeat, mayo, celery, onion, mustard, salt, curry powder & pepper.
Spread 1/2 cup crabmeat mixture on the bottom of each roll. Place on large baking sheet.
Sprinkle with cheese.  Spread butter on inside of roll tops.  Broil both halves of sandwiches 4 inches from the heat for about 3 or 4 minutes, until the cheese is melted and crab stuff is bubbly.  YUM.  These are so good with the simple soup above.  Your peeps will worship you.
