Hey OddTodd - this recipe is always a favorite and you can make it vegetarian style!!! Really good protein, iron and carb source!
Laine's Greek Angel Hair Pasta
You need:
1 Box Angel Hair Pasta
1 box frozen spinach (or 1 bag fresh spinach)
1 container crumbled feta cheese
1 basket baby cherry or grape tomatos (cut up or diced - whatever you prefer)
1 can chicken broth or vegetable broth
black olives, green olives (to taste - optional - cut up and pitted, of course)
hot cherry peppers (optional - cut up and remove seeds)
garlic, crushed red pepper, basil, olive oil
Boil and prepare angel hair pasta, put aside..
In a skillet, heat up spinach with the olive oil, garlic and spices until cooked (a few minutes if frozen, a few seconds if fresh). Sautee on small flame and add broth, cut up tomatos, olives, cherry tomatos and feta cheese. Sautee about 15-20 minutes or until hot and all flavors are blended in. Pour over drained pasta and EAT!!!!
Yummmmm!!! It's spicy, cheesy, salty - all the good things in life!!! Everyone who I make this for loves loves loves it!!!
