Leftovers Lo Mein

Here's a cheap and super yummy ramen recipe...

Use Oriental flavored ramen....if this is a main dish, I'd use one
package per person.

Boil the ramen as usual, but set the seasoning packet aside for later.
Drain and rinse the cooked ramen noodles. Heat a  tablespoon or so of
veggie oil in a large skillet or wok then stir fry any leftover sliced
chicken or pork or veggies you might have around, like cabbage, onions
and snow peas. After a couple minutes, when everything is done, transfer
it to a bowl. Again, heat some oil in the same pan, add the drained
ramen noodles and sprinkle with the seasoning packet(s). Stir-fry until
mixed well, and then dump back in the veggies/meat. Give it a couple
stirs and you have lo mein! My daughter prefers this with noodles only,
so even without the "leftover" part, it is yummy, and super cheap.

Ok so I actually sent this over earlier but didn't follow email directions properly. I'm from Orange County, California. Got this recipe from my Boss who happens to make awesome chicken for her employees all the time. Thought I should share.

 
Use one brick of achiote paste (available in most grocery stores in the Hispanic food aisle --little boxes about $1)
Put in bowl, mash up with 1/2 can of orange juice concentrate
garlic
a bit of olive oil
lime juice (key limes/limones)
oregano


Let marinade with chicken at least overnight

Barbecue or cook in very hot oven for a few minutes

You can also use to marinate pork,  serve with pickled onions and tortillas, Yucatan style, with the beverage of your choice. YAY

When I was a struggling homie--new to LA, I used to make these donuts.  I used to have mashed potatoes for dinner, and these for breakfast.  That was before the whole Carb craze!!  But, they are cheap as hell and easy to make.  That's where I live still and why I love this recipe.

$1 Leftover Drop Doughnuts
 
1/2 cup leftover mashed potatoes, or cooked potaotes mashed w/ milk & butter--you don't want any garlic in these!
 
1/4 cup sugar
1 egg, beaten
1/2 cup sour cream
1 teaspoon vanilla extract
1-1/2 cups flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
Cooking oil for deep frying
additional sugar or powdered sugar, optional
 
In a large bowl combine potatoes, sugar , egg, sour cream and vanilla.
 
In another bowl combine flour, baking soda & baking powder.
 
Stir dry ingredients into potato mixture.
 
Heat oil to 375 degrees.
 
Drop dough by teaspoonfuls, 5 or 6 at a time into hot oil. Fry for 1 minute per side before turning.
Drain quickly on paper towels, then dust with sugar if desired.
Serve immediately.
YIELD: about 3 dozen
 
I loved these dipped in really cold chocolate milk while they were still hot.  Mmmmmmm.

Easy Kielbasa Skillet
 
6 oz. Lean turkey kielbasa
Cubed potatoes
Veggies- Brocolli, Cauliflower, etc.
Frozen stir fry mix (with or without the "seasoning")
1/4 tea. pepper
Shredded cheddar cheese
Butter
 
Cook the kielbasa to taste and slice. In a 10 inch skillet, melt a bit of butter. Add potatoes, stir fry mix, and pepper. Cook for 10 minutes on medium heat. Stir occasionally. Add the kielbasa and veggie choice. Cover and simmer for another 10 minutes. Turn off the heat and sprinkle in the chesse and let it melt. Viola!
 
So easy, yummy, and pretty cheap. Follow it up with some chocolate chip cookies and a good movie- Excellent.

Tomato Salad
 

Ingredients
 
Spanish onion or Vidalia or any other big onion variety
Tomatoes - for the bestest taste use field tomatoes straight offa the vine in summer.
Vegetable oil
Oregano
Salt
 
Slice the onion into thin rings. Separate rings tossing with salt and set aside in a bowl for 15 minutes minimum. The salt makes the onion soften up and mellows the taste.
Cut yer tomatoes into big chunks and throw in with onions. Add oregano, you can never have too much oregano. Drizzle vegetable oil over everything and toss. Tastes best at room temperature. Serve with fresh bakery bread. You'll need it to mop up all the oil, oregano, tomato juice numminess.
 
Hmm. This salad always reminds me of summer.
