PUMPKIN GINGER BISQUE

OMG! This is the best soup recipe for the fall. I made it Sunday and had rave reviews! Too many ingredients though. But damn good. I like it because it's not your everyday food. Put pumpkin in soup? What? Yeah, definitely different.

2 tablespoons olive oil
3/4 cup chopped shallots
1/2 cup chopped onion
2 teaspoons grated fresh ginger
1/4 cup all-purpose flour
4 cups chicken broth
1/2 cup apple cider
1 (15- or 16-ounce) can pumpkin
1/3 cup pure maple syrup
2 bay leaves
1/4 teaspoon dried thyme, crushed
1/4 teaspoon ground cinnamon
1/4 teaspoon pepper
1/8 teaspoon ground cloves
1 cup half-and-half or whipping cream
1/2 teaspoon vanilla
Whipping cream (optional)
Fresh thyme (optional)

In a 3-quart saucepan heat oil over medium heat. Add the shallots, onion, and ginger; cook until tender. Stir in the flour. Carefully add the chicken broth and cider all at once. Cook and stir over medium heat until thickened and bubbly. Stir in the pumpkin, maple syrup, bay leaves, dried thyme, cinnamon, pepper, and cloves. Bring to boiling; reduce heat. Simmer, covered, for 20 minutes. Remove from heat. Discard bay leaves. Cool slightly. Stir in the half-and-half or whipping cream and the vanilla. Heat through, but do not boil. Ladle into soup bowls. If desired, swirl a little whipping cream into each serving; garnish with fresh thyme.

Makes 8 to 10 servings.

Sue's Tomato Salad
 
Spanish onion or Vidalia or any other big onion variety
Tomatoes - for the bestest taste use field tomatoes straight offa the vine in summer.
Vegetable oil
Oregano
Salt
 
Slice the onion into thin rings. Separate rings tossing with salt and set aside in a bowl for 15 minutes minimum. The salt makes the onion soften up and mellows the taste.
Cut yer tomatoes into big chunks and throw in with onions. Add oregano, you can never have too much oregano. Drizzle vegetable oil over everything and toss. Tastes best at room temperature. Serve with fresh bakery bread. You'll need it to mop up all the oil, oregano, tomato juice numminess.
Hmm. This salad always reminds me of summer.

PIZZA COUSCOUS

 

Here’s a little Italian-American/Middle-Eastern fusion dish I came up with. (I call it that because it sounds more pretentious, and pretension is funny.)

 

1 box couscous ($2.00)

Sliced or diced pepperoni ($3.00)

Pizza sauce ($2.00)

Mozzarella cheese ($2.00)

 

Make couscous and stir in enough pizza sauce to make it bright orange. Stir in pepperoni. (If it’s sliced, I advise cutting it into smaller pieces.) Sprinkle mozz over all and mix in well until it’s melted. Cooks in 5 minutes! Super-delicious! We keep all these ingredients in the house so when we don’t feel like making normal dinner, we can make pizza couscous instead of dropping $20 on delivery. Awesome!

I’d like to provide more information on the drum fish worms mentioned on the Tuesday’s Recipe’s page.

LSU has an article about these spaghetti worms (seems even more appropriate to talk about them on the recipe page with a name like that), but that article contends that you would not be able to tell by taste that the fish you are eating did or did not have these worms, and the worms are completely harmless.

I don't know about everywhere, but here--in sunny, Southern California--we are ready to LUAU.
Here's a crazy-good salsa you can toss together in no time. It might even get the girls to break out their grass skirts and do a hula dance for you. Even if the girls don't dance, it's still a great salsa. But hey,see what happens...
I love this recipe because it makes me shake my grass skirt, you'd like it if you saw that. Try it anyways.

PINEAPPLE LUAU SALSA

(makes about 1 cup)

In a bowl, mix 1 cup canned, crushed pineapple, with 1 cup chopped fresh tomatoes, and 1/3 cup chopped fresh cilantro. Add hot sauce to taste. Eat on tortilla chips and do the limbo. REALLY.
