3. Bake the cake until it is golden brown and a
toothpick inserted in the center comes out clean. 40 to 45 minutes.
Remove the pan from the oven and place it on a wire rack to cool
completely, 1 hour.

Turkey Feast
2 Cups
turkey meat cut in large cubes
8 Strips of
thick bacon, cut into squares
2 Apples or
Pears (or 1 of each), cored and cubed, and at room temperature
Salt,
pepper
(Note: Choose
crisp apples or pears, not the soft varieties.)
Heat a large
skillet, and fry the bacon squares slowly so they render fat instead
of burning.
Add the turkey
cubes, add a pinch of salt and pepper, let the meat soak-up the hot
fat, and heat thoroughly.
Toss in the
apple or pear cubes, and heat.
Serve
immediately. Serves 2-4 people.
Can be served
over Chinese noodles, and garnished with walnut halves if you're
employed, or served with cubes of stale bread if you're
still unemployed.

Dear Todd,
If your readers want to show-off a little this
Thanksgiving holiday, but want something Super Easy, I have just the
thing. Let's call them "Sweet Potato Party Balls".
You'll love them because they are YUM, but
you'll also make everyone think you went to a lot of trouble for
them. Awww.
Sweet Potato Party
Balls
You need: Sweet potatoes (1 big one will
make about 8 balls)
Large, fresh marshmallows
Butter, milk, and salt to
taste
Crushed nuts (use what you
love, pecans are gooood)
In a large pot, boil your potatoes until
soft. The skins will slip right off after cooking, so don't bother
to peel beforehand.
With skins removed, put cooked potatoes in a
large bowl for mixing. Beat with mixer just like mashed potatoes,
starting with 2 Tablespoons of butter and a small splash of milk,
dash salt, adding more as needed. You can add, but you can't take
it away---use caution here.
Once beaten (not runny! you want the mashed
po's the consistency of soft play-dough) shape some potato around a
large marshmallow making sure to cover it well.
Once marshmallow is completely covered in
potato, roll into crushed nuts. Place nut-covered balls on
sprayed baking sheet. Drizzle lightly with some melted butter and
bake at 350 degrees for about 25 to 30 minutes. The marshmallow
melts inside the potato ball and the nuts get crunchy. It is a
total score. Peeps that don't like sweet potatoes like them this
way--they're that good.
Then sit back and act all tired, like you
fussed or something.

Creamy Turkey
Muffins
(feeds 6
girls or 1
hungry dude,
twice!)
2 Tablespoons
butter, use the
real deal if
you've got it.
2 Tablespoons
all purpose
flour
1/2 teaspoon
salt
1/2 teaspoon
pepper
1 cup milk,
whole milk if
you've got it,
2% is fine tho
1 cup shredded
mixed cheese
(your
favorite combo
shred at the
market)
1/4 teaspoon
Johnny's sauce,
or
Worcestershire
sauce
3 English
muffins, split
in half and
toasted
6 leftover
turkey slices
~In a saucepan
over low heat,
melt the butter,
when
it's smooth--stir
in flour, salt &
pepper.
Keep stirring
and slowly add
the milk. Bring
to a boil and
boil for about 2
minutes STIR THE
WHOLE
TIME--really.
Reduce heat to
low.
Add cheese and
Johnny's sauce
(or
Worcestershire).
Stir until
cheese is
totally melted.
Remove from
heat.
Put toasted
muffins in a
shallow pan next
to each other.
Top each half
with your
turkey. Top with
2 or 3
Tablespooons of
cheese sauce.
Broil for about
4 or 5
minutes--or
until
bubbly-- with
muffins 5 inches
from heat
source. Salt &
pepper as
desired.

I just read the recipe you referenced on
your daily fact - the sweetened
cornbread. I whipped up a batch while my kids had dinner. Having a
slice
right now, and I have to say, while it's nice and sweet (reminiscent of
those great Pepperidge Farm Corn Muffins...) it's also QUITE baking
powder-y. So, there's a slight bitterness in it. HOWEVER, I am
enjoying
it. So, I endorse your suggestion of this recipe.
