Dear Todd~
If you need something inexpensive to serve a lot of homies while you
decorate the tree, or whatever~this is just your thing. I call it
Mexican Party Soup. Have the peeps bring the beer and some lights
and you're all set. If you haven't got a tree, decorate each other.
You won't have to clean up the pine needles afterwards.
And BTW, if you are entertaining on a budget, and who's NOT??...have
everyone bring an ingredient to the party and assemble the soup
while you drink beer together.
Mexican Party Soup
(makes 4 quarts)
2 pounds ground beef
1 medium onion, chopped
1 quart water
3 cans (14 oz each) diced tomatoes, undrained
2 cans (15 oz each) chili beans
1 can (15 oz) kidney beans, rinsed and drained
1 can (4 oz) diced green chilies (Ortega)
2 envelopes taco seasoning mix (your favorite brand)
1 envelope (1 oz) original ranch dressing mix
2 T. brown sugar
1/4 t. cayenne pepper
shredded cheddar cheese and sour cream, if desired
Cold Beer and limes
In a Dutch oven, brown beef and onion; drain well. Add water,
tomatoes, chili beans, kidney beans, chilies, taco mix, ranch mix,
brown sugar, and pepper.
Bring to a boil. Reduce heat, cover and simmer for 30-45 minutes.
Garnish with cheese and sour cream if desired.

Here's an easy snack to whip up. Enjoy!
Party time Snack Squares
· 6 slices bacon
· 1/3 cup chopped green bell pepper
· 1/3 cup chopped onion
· 4 roma (plum) tomatoes, seeded and chopped
· 1 teaspoon dried basil
· 2 tablespoons mayonnaise
· 1 clove crushed garlic
· 1 refrigerated pizza crust dough
· 3/4 cup shredded Swiss cheese
Preheat oven 375 degrees F (190 degrees C).
Place bacon in a large skillet over medium heat. Fry bacon until
crisp. Drain on paper towels.
Crumble bacon into a medium-size mixing bowl. Mix in bell pepper,
tomatoes, and basil. In a separate small bowl, combine mayonnaise
and garlic.
Roll pizza crust into a 12x15 inch rectangular baking sheet. Spread
the mayonnaise mixture evenly over the crust. Sprinkle the bacon
mixture over the mayonnaise, and top the entire pizza with cheese.
Bake 18 to 20 minutes or until the top is bubbly and the crust is
golden brown. Cool and cut the pizza into 24 squares. RKH

Last, but certainly not least, are my famous chicken drummers. I
recommend making twice as many of these as you think you'll need,
because they are that tasty. True love~!
MAHOGANY CHICKEN DRUMMERS
1 pkg. chicken drummers (small drumsticks) about 2-1/2 lbs.
1/2 cup soy sauce
1/2 cup honey
1/4 cup molasses
2 TABLESPOONS ketchup
1 teaspoon ground ginger
2 cloves garlic, chopped
Place chicken in shallow bowl. Mix remaining ingredients; pour over
chicken.
Cover and chill 1 hour, (or up to 24 hrs.) turning occasionally.
HEAT oven to 375 degrees. Line pan with foil.
Remove chicken drummers from marinade; reserve marinade.
Place chicken in a single layer on foil covered pan.
Brush with marinade & bake 30 minutes.
Turn chicken and bake 20 minutes longer, brushing each 5 minutes
with marinade.
Chicken will be deep brown colored. Discard any left over marinade.
:) *This can be doubled or even tripled to serve more people.
Happy Holidays to all Todd's cool fans and friends. Best of all in
2008 to ya! :)
