Okay! Okay! Stop yelling at me!

Here is a recipe for a summer BBQ that is quick, cheap and tastes great along with all those tasty grilled meaty things we all put on the barby every summer:
 

Quick-Cool Cole Slaw
 
Ingredients:
1 head green cabbage
1 bunch green seedless grapes
1 small cucumber (seedless)
Miracle whip
sugar
 
Preparation:
 
Peel off the outer few layers of the cabbage and discard, then wash in cool water. Wash grapes. Peel cucumber. Slice the grapes in half, dice the cucumber. Cut off a large section of cabbage and finely slice (paper thin) into strips that aren't too long to eat comfortably with a fork. Not like spaghetti, only 1-2 inches long.
 
Now, put all ingredients in a large bowl. Put about 1/3 cup of Miracle whip in a small bowl and add about 1 Tablespoon of sugar. Stir to combine. Mix into ingredients in large bowl. Let sit in fridge while everything else is cooking. When everything else is done, give slaw a quick stir and serve up the cold, crunchy goodness.
 
I know the ingredient list is woefully short of accurate measurements, but really, this is a hard dish to screw up! It's simple, make more if you want more, make less if you want less. Like grapes, add more. Hate cucumber, add less. Want it sweeter, add more sugar. Etc., Etc., Etc. ENJOY!

Alright Todd sorry for being such a slacker on the recipes, I have tons but this is a good easy one to start with.

 

This is my recipe for Guacamole, it's really good.  I make this for all summer BBQ's because I think it's quick and easy and everyone always seems so impressed.
 

And of course I go by taste on all of this, so I'm totally not offering measurements.  If you are unsure go with a little and then you can add more to suit your palate.


DANI'S GUACAMOLE!

 

2 Large Haas Avocados

1 Large Tomato

1 Medium yellow Onion

3 cloves of Minced Garlic

Salt

Cayenne Pepper

Cumin

Lime Juice

Fresh Cilantro

 

Cut the avocados in half and remove the pit (trick here just use your knife and make like you are going to chop the pit in half,  your knife will get stuck in the pit, and it pulls right out, then just squeeze the pit to get it off of your knife)  Spoon the avocado into a bowl and pour some lime juice over it, just enough to coat it.  Let that sit for a while, while you chop everything else up.

 

Mince your garlic, chop your tomato, chop your onion (however big or small you want)

 

Use a potato masher or a fork and mash up the avocado really good, season with all the seasonings listed above.  (again start small  then add to taste).  Fold in the garlic, tomato and onion. Add some more lime juice, then chop some fresh cilantro and mix that in there as well.

 

Serve with some chips and you are good to go.
