Below is a good recipe, for a
holiday treat, and it's almost fool-proof.
I'm from Overland Park Kansas. If you like cheesecakeyness, you'll like this recipe,
and so will your friends:
Alex's Way Good
Cheescake
Ingredients:
2 8 oz. pkgs cream cheese
1/2 cup sugar
1 Tbsp. lemon juice
1 tsp. vanilla
2 eggs
Vanilla Wafer cookies
Cream all together except the eggs. When creamed, add the eggs and mix well.
Place vanilla wafer in bottom of cupcake cup, pour cream cheese mixture over and
fill 1/2 full. Bake at 325 for 25 minutes. Top with favorite fruit --
cherries, strawberries, blueberries, etc.
