Here's a great recipe that is perfect for fall.

PS, if you really want to simplify this recipe, just stuff the chops with straight up Stove Top stuffing--prepared according to the directions on the box. 
I promise, it will still be delicious, and your peeps will be just as impressed.

Some more people had their last day today.  The attached letter is from a guy that works in the Claims dept.
I haven't heard him say more than 10 words in the entire three years I've worked here. Who knew he had a sense of humor.
 
I took out some of the personal information (security issues).  It's interesting.
 
I made these low-fat carrot cupcakes to give to people who were leaving today.  I used canned pumpkin instead of oil in the recipe.

Hi, it's Tina from Madison again. So drinky-drink
recipes for summer is what you want? This is good,
because I have the perfect one. Even if you don't
consider yourself a bourbon-kind-of-person, you'll
suck this one down with gusto. It doesn't even qualify
as foo-foo, as it's not too sweet, and it bears no
accoutrements (except the lime rind, so if you're
really macho, just skip it):

Kiss on the Lips

3 oz. bourbon (the good stuff, such as Knob Creek or
Baker's)
5 oz. apricot nectar
splash of lime juice
cracked ice
lime rind for garnish

Combine the bourbon, apricot nectar, and some ice in a
shaker, and give it a couple of good rattles. Fill a
collins glass halfway with more crushed ice, strain
the drink over the ice, splash the lime juice on top,
and give it a quick swirl with a straw. Garnish with a
twisted lime rind.
