Cheesy Chicken
Enchiladas
What you need:
1 (10 3/4 oz) can nacho cheese soup
2 (10 oz) cans chicken breast (like the
tuna cans) OR 2 cups shredded (cooked) chicken
1 sm. jar green chiles
1/2 cup salsa
1 Tablespoon chili powder
1/2 cup milk
8 soft flour tortillas
What you do:
Preheat oven to 375 degrees F.
Blend soup and milk in a small bowl; set aside. In a large bowl, add
chicken, chiles (or leave those out if you don't like em, but you hardly
notice em, so it's up to you), chili powder, salsa and 3 tablespoons of the
soup mixture. Blend together well. Spoon filling into middle of
each tortilla, roll up and place into greased baking dish (just big enough for
tortillas cuz you want em all squished together like). Top with
remaining soup mixture. Cover with foil. Bake 40 minutes.
Garnish with sour cream, salsa and/or diced tomatoes, lettuce and onions (this
parts up to you, be creative!). Enjoy em, I know you will!
