TUESDAY'S LUNCH SPECIAL IS:

SQUIGGLES (aka American Chop Suey) From Marisa in Allston, MA

Ingredients:

Olive Oil

One onion - chopped

One green pepper - chopped

Squiggly Pasta

Jar of Spaghetti Sauce

Cheap ground meat or ground meat substitute (I like ground Beef NOT from the Dixie Diner Club http://www.dixiediner.com because even though you have to pay more up front, it's cheaper than buying meat in the long run. And more healthy. And it's close enough to meat that it fooled our cat who isn't an idiot.)

Instructions

Boil a bag of squiggly pasta and drain when cooked.

At the same time:

In a skillet or dutch oven, saute onion in olive oil.

Add ground beef and brown - drain excess oil if you like - (Note if using beef substitute, add sauce first then add "meat" and no need to drain)

Add jar of sauce and green pepper - continue to stir around

Add any other spices/herbs or hot sauce or or extra garlic or red wine you

might like.

Add the cooked pasta and stir.

Serve and enjoy.

Also makes excellent left overs for the next few meals. I like this meal because it is fiscally responsible, hearty,
yummy and makes excellent left-overs.
