Hi Todd!
On
Friday nights my dad used to go play poker.
Mom would make this for the three of us (mom, sister and me).
We loved it. The very idea
of this salad made my dad shudder. Years
later I made this for a guy I had just started dating.
I never heard from him again. Perhaps
it should be called:
No
Man Taco Salad
1lb ground beef or turkey
1
packet taco seasoning
1
14oz can of stewed tomatoes, drained
1
head iceberg lettuce shredded
1 cup grated cheddar cheese
1
bag Fritos - like a regular bag, not like a snack size bag
Put
the lettuce in a huge bowl. Mix
in 2/3 of the cheese
Cook
up your beef or turkey in a skillet. Add
taco seasonings as directed on the packet. Add
the tomatoes and heat through.
Add
the meat/tomato mixture to the lettuce/cheese bowl and mix it up.
JUST before serving mix in the Fritos.
Serve in bowls and sprinkle with the remaining cheese.
Eat fast because the Fritos are going to get soggy - although a degree
of sogginess is part of the charm.
Serves
one adult and two kids or two adults

the full story on the guy who was scared off goes something like this:
Originally I was going to make this for my Neighbor J. We
had "dinner night" on Tuesdays.
I always tried to make something grown up and adventurous.
Neighbor J would heat up Ragu sauce on pasta.
The Taco salad was to be my "back atcha" dinner.
Anywho, Jay stood me up at the last minute so I called New Guy.
As mentioned, he never called again.
I ran into him months later and he said the usual "it wasn't
you...it was me...blah blah blah". He
said the salad was pretty good. I
have never made this for my husband, just in case.
