TUESDAY'S LUNCH SPECIAL IS

IN GRANVILLE, MA:
Grilled Potato Pita
Pizza Type Thingy
Ingredients:
Olive oil
1 clove garlic, pressed or finely
chopped
Salt, fresh ground black pepper
1 cooked potato (baked or boiled
or whatever)
quarter cup shredded cheese; any
cheese
quarter cup each chopped pepper
(red is best) and red onion, mushrooms
1 pita
sour cream, salsa if you like
In a round skillet over medium heat,
pour in olive oil to coat pan, then toss in the pita. Grill it on both
sides until it begins to brown nicely. At the same time, in a separate
pan again in olive oil, saute the potatoes and veggies and garlic until
to desired tenderness (I prefer them slightly firm with brown edges) .
Season these with salt and pepper to your liking.
Throw veggie and potato mix onto
the pita, sprinkle with cheese until melted.
I toss on a dollop of sour cream and
some salsa for a Mexican flair.
Usually have to eat it with a fork and
knife - slightly messy.
Enjoy!
I love this recipe because it's so
easy to make and it's filling without meat. I like to crack a
cold Bass and there ya have lunch.
