Hi tOdd,
How ya been? I've enjoyed hearing the saga of your
puppy and you...
OK here's my recipe:
BEER BREAD
Oven 350 degrees
Ingredients:
3 tablespoons of sugar (you could try half sucralose
half sugar, but I say live a little and go all the way
with sugar)
3 cups of self rising flour
1-12 ounce beer--any kind you are willing to sacrifice
to the bread goddess--room temperature to minimize
foaminess upon pouring
Butter (a stick is easier to handle)
Put the dry ingredients into a bowl first, then pour
on the beer, slowly to prevent foam overflow. Once
beer is in, stir until moist and lumpy. Dump into a
bread pan or cupcakes or whatever pan you want.
Bake for about 20 mins and rub the end of a stick of
butter over the entire crust until it is coated well
Continue to bake for another 20 to 40 mins ('muffins'
will need less time than a 'loaf') until a toothpick
comes out w/crumbs on it
Cool and slice... I like to slice it when it's warm
but not going to burn my hand, and then I like to glom
some honeybutter on it :)
This bread is a bit sweet, but still works fine for
bologna sandwiches... Enjoy!!

Hamburger & Rice
1 lb. hamburger, thawed out
1 can diced tomatoes (the kind with onions and garlic is good)
1 cup rice
2 cups water
Just a little olive oil
1) Put the rice and the water and some olive oil in a microwave bowl, at least a 4 cup size. Nuke it for 5 minutes on high. Then nuke it for 15 minutes on medium.
2) While the rice is cooking, put the hamburger in a big frying pan with some olive oil and cook it until it’s just barely brown, not all the way.
3) When the rice is done cooking put it in the frying pan with the hamburger and the diced tomatoes and mix it all up. Careful, the rice will be really hot!
4) You can also add a can of mushrooms, drained.
